You know what stinks? That moment you realize you need a specific ingredient and what you have isn’t suitable for your plans, yet you were just at the store. You went to the store, even brought a list, followed the list but then there’s that one item you didn’t think to add. Even though our store is only 5-10 minutes away, it’s still a hassle to pack back up and go out for one or two tiny things. So instead, I put whatever plans I have in mind on hold for another day. I couldn’t be bothered to venture back out most days.

I’m not wishing for my kids to grow up, but I do look forward to the times I can send one of them to on quick errands to the store. Or when they’re old enough and I can say ‘watch your brother and sister’ and run to the store myself. Someday!

But I’m really not wishing for that to be today. It’s just the convenience factor in it all.

You had to know that was coming after I’ve shared a basic English muffin bread, a banana-blueberry English muffin bread and even a bacon and cheddar English muffin bread recipe. They’re all equally tasty depending on your preferences. The apple cinnamon variety very obviously has a special spot in my heart and belly. I love all things apple and cinnamon and this bread is no exception.

This is just like your favorite English muffin straight out of the package, including all of those precious nooks and crannies, but in a loaf form and with the taste of the season – apples!

Apple Cinnamon English Muffin Bread

Your favorite English muffin, turned into the perfect loaf of bread with a seasonal twist, featuring cinnamon and sweet apple pieces throughout!

Ingredients
 

  • Cornmeal, for pan
  • 2 1/2 C bread flour
  • 1 pkg rapid rise yeast
  • 1/2 Tbsp granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 medium apple diced, roughly 1/2C
  • 1 1/4 C apple cider, heated to 115°F

Instructions
 

  • Lightly grease an 8x4-inch loaf pan. Sprinkle well with cornmeal. Discard extra cornmeal.
  • In the bowl of a stand mixer, combine dry ingredients. Dice apple into 1/4-inch pieces. Add to dry ingredients, tossing well to coat. Heat cider to a temperature of 115-120°F. With mixer running on low, slowly add warm apple cider. Increase speed to medium, continuing to mix until dough pulls away from the sides of the bowl.
  • Lightly grease a rubber spatula or your hands. Transfer dough to prepared loaf pan. *Dough will be sticky. Spread dough into an even layer, pressing into corners. Sprinkle with cornmeal. Cover and allow to rise in a warm location until doubled in size, roughly 60-90 minutes.
  • Preheat oven to 375°F. Bake for 30 minutes. Allow bread to cool in pan for at least 15 minutes before turning out onto a wire rack to cool completely.
  • Toast slices and serve with bread, jam or apple butter. Store remaining bread in an airtight container.
