Apple Raspberry Tart
An easy and flavorful Fall tart, featuring tender apples, raspberries and an all butter crust.
Can we talk chick flicks for a minute? My all time favorite is The Notebook. It makes me cry every time I watch it. It’s funny how we all have a movie that does that to us, but we’ll still continue to watch it, knowing full well we’re likely to cry. There are so many others that I can easily watch over and over again, never getting bored. I finally had the chance to watch The Age of Adaline not too long ago. It was so good. So much so that I even debated on immediately buying it. I didn’t, but the thought definitely crossed my mind. If I ever find a good deal on it, I probably won’t hesitate to get it. That being said… if you haven’t seen it, you absolutely should. I’m pretty sure this could easily be an agreed upon date night movie, if you’re looking for a romantic drama.
Also, I just watched The Longest Ride the other day. I’ll be honest, at first I was pretty sure I was going to not like it at all or turn it off. The beginning definitely didn’t win me over. But, it ended up being pretty good.
I like the movies (and books) that have a good backstory. The ones that tug at your heartstrings and emotions. The ones that you can connect with in some way.
Also, totally unrelated but I’m probably the last person on the planet to have heard Adele’s new song. It literally just came on one of my Pandora channels and I’d only heard teeny tiny blips of it prior to this. For the longest time I was kind of over her music, only because it was so over played all over the radio and then when it would pop up on my own Pandora channels I’d get annoyed. It’s nice to have some new music in the rotations!
As you may know, I’m completely apple obsessed. And, I love raspberries, so clearly I had to combine them into one amazing Fall dessert.
Apples and raspberries are a beautiful match. Perfectly sweet and tart, balancing each other out. And, the bold red raspberries offer a fun pop of color to an otherwise simple looking apple tart.
This apple raspberry tart should definitely be on your Fall baking list!
The same great flavors of your favorite apple pie, in a simple single layer tart.
Easy all butter crust, topped off with tender apples and fresh raspberries. A flavorful tart, perfect for all of your Fall celebrations!
Apple Raspberry Tart
Ingredients
Crust:
- 1 1/2 C all purpose flour
- 3 Tbsp granulated sugar
- 1/2 tsp cinnamon
- 1/2 C butter, cold
- 1 egg
- 2-3 Tbsp ice water
Filling:
- 4 C apples
- 1-2 Tbsp lemon juice
- 1/2 C fresh raspberries
- 1/3 C granulated sugar
- 1 tsp cinnamon
Instructions
- In a food processor or stand mixer, combine flour with sugar and cinnamon. With mixer or food processor running on low, mix in chunks of cold butter, 1 egg and enough ice water to pull dough together into a ball.
- Press dough into a non-stick 11-inch tart pan with removable bottom. Freeze for at least 20 minutes.
- Meanwhile, preheat oven to 350°F.
- Peel and slice apples to 1/8-inch thick. In a large bowl, toss apples with lemon juice to prevent browning. Add sugar and cinnamon, tossing to coat apples well.
- Arrange apple slices in prepared tart shell. Add raspberries throughout.
- Bake for 45-50 minutes or until crust is golden and apples are tender. Cool completely before slicing.
This is gorgeous!! It’s so elegant but so easy to make. The best of both worlds!
Thanks Julie!
Rachel, I LOVE The Notebook–I agree, must have a good back story. I am also in love with this tart! I love that the crust is all butter–I REFUSE to eat shortening :)
Thanks Kristen!
Gorgeous tart, love the apple/raspberry combo. Had it in juice, never in pretty tart. Yum! And now I have a new movie recommendation!!!! Always looking for a good movie….thanks Rachel. Here’s a great book recommendation for you, “The Invention of Wings” by Sue Monk Kidd. Just had a book discussion on it and it was excellent. A novel, but with many grains of history/truth re:slavery/abolition, women’s rights etc. Hard to put down!
Thanks for the book recommendation, Allie!
Rachel, that is one gorgeous tart! And autumn is my favorite season for baking.
Thanks so much Jean!
Girl you don’t even know! When The Notebook comes on I have to watch it. And I cry through the entire movie. Not like silent tears rolling down my cheek….NO I CRY. Like big ugly crying. You know that picture where they show Kim Kardashian ugly crying? That’s me while watching The Notebook.
Things that don’t make me cry? An amazing dessert like this! I love apples and raspberries so I would be all over this festive dessert. I might even like a big scoop of ice cream on top….yum!
It really is an ugly cry kind of movie but so worth it!
Love apple and raspberry combination! This tart is both beautiful and delicious!
Thanks Medeja!
The Notebook makes me cry the ugliest of ugly cries!! But dang is it good!! I imagine, like this tart looks – it’s stunning!!
Agreed! And thanks so much Megan :)
May be you’re not the last person to have heard Hello by Adele. Because I have heard this 2 days ago!! LoL
However, my hubby brought 3 pounds apple yesterday. I was looking for something special to make for him and got this one! It looks promising to me and just printed out to try this. Many thanks Rachel :)
I hope you enjoy the tart!! Thanks Jenny :)
Selena makes me cry every time. Its like i prepare myself to cry every time i watch it! & Thank God Adele came out with something new! It was about time! Its amazing how after all this time she is back full force & everyone is all over her new song! I’m guessing that’s what makes her a great artist! Now, this recipe is everything! I Love Raspberries!
