We love breakfast. Breakfast for dinner is even better. I’m not a big pancake fan, but Josh is. I’m more of a scrambled eggs kind of girl. We’ve always taken the easy way out and used the box mix for pancakes. Now that I’ve seen how easy it is to make pancakes from scratch… Oh the possibilities.

Last week was national pancake week. I figured, why not try something different. Banana pancakes? It’s worth a shot.

Banana Pancakes

Total Time: 10 minutes

Ingredients
 

  • 1 Cup all purpose flour
  • 1 Tb granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg, beaten
  • 1 Cup milk
  • 2 Tb vegetable oil
  • 2 bananas, mashed

Instructions
 

  • In  a small bowl, mix dry ingredients. In a medium bowl, mix egg, milk, oil and mashed bananas. Add dry mixture to banana mixture, combine well. Your batter will be lumpy, that's okay. Heat your skillet. Pour batter onto hot skillet using 1/4 or 1/3 measuring cup. Cook until golden brown on both sides.
