Not too long ago I spotted strawberries in the store and simply couldn’t resist. Figuring that strawberries and blueberries would make a nice dessert or snack together, I picked up a package of blueberries too. I love the simple but delicious flavors in this. The colors make it perfect for any patriotic gathering and the simplicity of it makes it perfect for anyone to throw together last minute. Of course I wouldn’t blame you if you didn’t want to share this with others. It’s really hard sharing yummy fruit. We’re big strawberry fans in this house, they disappear shockingly fast.

Originally I contemplated making this with a sponge or angel cake tossed in too but then decided on a really hot day the fruit and whipped cream would be plenty and not too heavy. Sometimes cake, even as light as some can be, can end up leaving a rather heavy feeling and you certainly don’t want that on a hot day or on an already full stomach. If you bring this to a party, just make sure ahead of time that there will be room to keep it chilled. Definitely do not leave this outside in the sun or heat. It’ll be a sloppy liquidy mess. Leave chilled until the last minute. Afterall… cold fruit is refreshing, especially in the summer!

Depending on your preference and available dishes, you can make individual portions or a large batch. The layering would be the same either way.

Berry Parfait

Festive red, white and blue fruit parfait. A fun dessert for any spring or summer occasion!

Ingredients
 

  • red and blue fruit, blueberries, blackberries, raspberries, strawberries etc
  • Whipped topping

Instructions
 

  • Cover the bottom of your dish with 'blue' fruit, in my case it was blueberries. Top off with a layer of whipped topping, being sure to cover the fruit well. Add a layer of 'red' fruit. If using strawberries be sure to cut them down in size. Add another layer of whipped topping. Repeat as necessary until your serving dish is full or you run out of ingredients.
  • Keep chilled until ready to serve.
