Possibly since before we were even expecting our third, I wondered how I’d announce the news here with everyone. I honestly can’t remember when I started thinking about this. I couldn’t not share something big like that but the question was how would I do it. Just spill the beans or do it in a special way. I sort of sneakily shared the news on twitter many weeks back. Each week I’d do it again and catch some new people by surprise.

Of course once everyone finds out they get excited for finding out if it’ll be a boy or a girl. Obviously I was the most eager of all but there were definitely a handful of people almost as eager, if that’s possible. I truly hate big surprises. Little ones I can deal with but a huge surprise like this just isn’t in the cards for me. It wouldn’t work. It’d drive me bonkers. We agreed if we had a girl and a boy, then decided on a third we wouldn’t find out early BUT we have two girls so finding out early wasn’t even a question.

Butter Fudge Cake – And A Request

Do you ever see a picture or recipe and decide you just have to make it? That happened to me this week. I saw this amazing butter fudge cake and knew it needed to be made and in my belly. I finally got around to making it yesterday. Because I only have one round pan, it took a bit of time to get the whole cake baked and assembled. It’s only a two layer cake so it could have been a lot worse! At least two pans would be easier but trust me, one is totally doable so don’t be scared off by this at all.

The only plan ahead item for the entire cake, including frosting, is to set out your butter so it comes to room temperature. Everything else can be done as you go. I was honestly expecting the cake to be a bit more yellow but it’s not. Maybe the original picture was slightly deceptive? Either way, it’s still delicious. Pecan Cherry Thumbprint Cookies

What feels like ages ago, my cousin requested I make something with cherries. I came up with several ideas, unfortunately when it came time to make the item at the top of my list the weather wasn’t cooperating. The forecast warned of high temps and equally high humidity. That is not the kind of day I want to be traveling with frosted anything and especially not a day I want anything frosted sitting out long. The pretty frosting will surely lose it’s form and very quickly begin sliding around. It was a fear, a very valid fear that I did not want to deal with.

Fast forward over a month later. Time for a birthday bash.  A perfect time for lots of desserts, as froofy as I desire. I had my heart set on making pecan cherry thumbprint cookies. Thumbprints are fun to make, giving you loads of possibilities. The fillings can range from simple to elaborate, flavored frostings, chopped fruit, jam, you name it! My plan was to make two different varieties of thumprints, which I did but the cherry variety turned out far tastier.

Instead of following the original recipe I altered another thumprint recipe I have made several times in the past. Since I knew this recipe was a winner, it seemed like a good and safe bet to use in place of an unknown. Sometimes the idea of trying something new, not knowing if it’s really going to turn out is scary. I almost always have a backup plan just in case the worst happens, but in this case it wasn’t necessary at all. I had faith in my altered recipe. And thankfully it absolutely paid off. Sugar Cookies and Royal Icing

Cookies are such a simple and fun treat to make and of course eat. I don’t remember ever making sugar cookies growing up. I only remember chocolate chip cookies being made. Maybe I only remember that variety because I always got to lick the spoon or scrape the bowl clean. Even back then, if the dough was left in the fridge I snuck a spoonful here or there. Mmm so good.

As for sugar cookies… Over the last handful of years I’ve enjoyed making them because they allow me to make fun shapes. Grab a handful of your favorite or seasonal cookie cutters and punch away. I remembered there were a few star cutters around so I thought it’d be neat to attempt to make some patriotic cookies. Afterall, 4th of July is right around the corner! Perfect White Cupcakes with Lemon Frosting

These are the most amazing and moist cupcakes.

I was still searching for a really good recipe and this may be it. Now I’m not saying I won’t continue to try other recipes, variations and options. But this one is absolutely 100% a keeper. It’s delicious. Perfect consistency, delicious moistness. Not a touch of dryness but remember that sometimes isn’t just an issue with the recipe itself but also how long you cook your cake or cupcakes.

I topped this batch of cupcakes off with lemon frosting. While being quite tasty it’s also fairly strong in large quantities. If you know me and how I frost cupcakes know that this frosting shouldn’t be frosted in that way. Oops. It was still really good but we agree that a light coating would be best due to it’s strong lemony flavor. Also, a problem I’m finding with homemade frosting is that it hardens in the fridge. Not to the point of gross and totally not edible but it’s not fluffy and soft. So if you like chilled cupcakes as I do and you’re having a party or sharing cupcakes or cake with other people then you may want to either chill your cupcakes and frost prior to eating or leave cupcakes out after frosting.  It’s still really quite good and does warm up quickly after being removed from the fridge.
