Did you have a nice 4th? We celebrated our oldest daughters 6th birthday! It was pretty low key, mostly hanging out together and opening presents… 95% books! She was thrilled and I’m happy to encourage reading as long as she’s interested, which is hopefully forever. Reading is good for the brain – and soul. I also took the girls to see Despicable Me 2. It was cute. They had a blast. Of course it could’ve gone smoother if the ticket guy had given us tickets to the showtime I’d asked for instead of an hour and forty five minutes later. Thankfully they let us go into the earlier show as I had wanted int he first place… found our seats in the dark too! Kind of a mess but still fun. Let that be a lesson to all – always double check your tickets to make sure you got what you asked for. Because I 110% know I told the guy the time and movie we wanted and he so clearly got it very wrong. Anyway…

We swam – or rather the kids did, because we still haven’t gone in the big pool but maybe today! We’ll see how the weather treats us. It’s so hit or miss lately – spotty storms, humid days, high heat, hot nights… you name it. I mean I’m totally not trying to complain because rain just plain stinks in the summer so I’m all for the sun and warmth! I’d just rather no humidity but I’ll take what I can get.

I’m also in a full on love affair with corn. It’s that time of year. I’m eating as much of it as I can while it’s fresh and juicy. We like to grill ours while other food is cooking. Slather that sucker with butter and a sprinkle of salt. So tasty. Have you tried any of the other corn varieties I’ve shared? >> FOUR ways with corn… FOUR!! So fun. So tasty. A must try. Trust me.

Of course you’re probably more interested in this wrap and let me tell you… It was so delicious that I’m craving one again right this very second. Of course I made this weeks ago so it’s totally acceptable to be craving it again. I’d crave this daily if someone would whip it up for me. I might have to start preparing chicken ahead so I can easily whip some of these tasty recipes up in a heartbeat. It’d probably make for more delicious and creative lunches around here, especially when I’m in a rut or in a hurry. It happens.

Freshly grilled chicken, tossed with romaine lettuce and creamy homemade Caesar dressing, all wrapped up and paired with strips of crisp salty bacon. It’s perfection. A refreshing and tasty summer wrap!

Chicken Caesar Salad Wraps

Total Time: 10 minutes
Yield: 2 wraps
What's better than a basic chicken Caesar salad? A wrap! Salty bacon takes this simple wrap over the top.

Ingredients
 

  • 1 chicken breast
  • 3-4 slices of bacon
  • Romain lettuce
  • Caesar dressing, homemade or store bought
  • Parmesan cheese
  • 2 burrito sized wraps

Instructions
 

  • Grill or bake chicken until center is no longer pink and internal temperature reaches at least 165°F. Cut chicken into thin strips. Prepare 3-4 slices of bacon, as desired, drain on paper towels.
  • In a large bowl, toss chopped Romain lettuce with Caesar dressing and Parmesan cheese. Divide lettuce between two large wraps. Arrange chicken strips and bacon slices between wraps. Fold or roll, enjoy.
