I’m never totally amazed by the weather, because something strange is always happening. But I swear this year has been particularly out of whack or maybe just more intense all around. Beyond everything that occurred over the winter months, is it just me or does it seem like this spring has been pretty dramatic already too? From the severe and frequent storms throughout the middle region of the country (and I can’t even just say mid-west because it’s the entire center, north to south), to several feet of snow in other areas. Just crazy.

But then the other day we went from 86 degrees in New England, very out of the norm for this time of the year, to a seemingly frigid high of 50. Brrr. Seriously, I felt it waiting at the bus stop. I’m ready for things to stay warm. No more ups and downs please.

Cookies.

Because cookies are good for the soul and make our bellies happy.

It’s also been exactly a month since my last cookie recipe so it was just time for another one.

These cookies are not only easy to whip up but are pretty quick too, compared to others I tell you to chill overnight. And I know how much some people loathe waiting to bake cookies, but sometimes it’s just necessary. These ones have a much shorter chill time, it’s still required so don’t skip that detail or your cookies may spread or cook too quickly and won’t turn out as they really truly should.

Perfect chewy cookies with sweetened coconut and chopped chocolate throughout! Let’s not forget the finishing touch of a sprinkling of flaked sea salt, for a fun salty addition to an otherwise sweet cookie. It’s the perfect combination.

Prep Time: 10 minutes, plus chill time

Cook Time: 12 minutes

Total Time: 2 hours and 20 minutes

Coconut Chocolate Chunk Cookies with Sea Salt

Chewy cookies with shredded coconut and chocolate chunks throughout, sprinkled with flaked sea salt for the perfect finishing touch.

Ingredients:

  • 1/4C unsalted butter, softened
  • 1/4C granulated sugar
  • 6 Tbsp light brown sugar
  • 2 Tbsp powdered sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1/4C sweetened shredded coconut
  • 3/4C all purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp coarse sea salt
  • 4oz semi-sweet chocolate baking bar, roughly chopped
  • Flaked sea salt

Directions:

  1. In the bowl of a stand mixer, cream together butter and sugars. Mix in egg and vanilla, followed by coconut, coarse sea salt, baking powder and baking soda. Scrape bowl as needed. Slowly add flour, mixing until smooth and all ingredients are fully incorporated. Stir in chopped chocolate by hand. Chill for at least 2-3 hours.
  2. Preheat oven to 375°F. Line a baking sheet with parchment or a silicone baking mat.
  3. Using a medium cookie scoop, scoop and place dough 2-inches apart on the prepared baking sheet. Lightly sprinkle with flaked sea salt. Bake for 11-12 minutes or until deep golden. Immediately transfer to a wire rack to cool completely.
  4. Store cookies in an airtight container.
