When I was little, my afternoons were always spent with friends. Whether we were hanging out at the neighborhood playground, climbing trees, creating the occasional dance routine in my front yard or crafting at another Girl Scout meeting… we were always together. I have so many fond memories of those early years.

I may not climb trees or attend Girl Scout meetings anymore, but something that hasn’t changed is my love for 80s music… okay, and Girl Scout cookies and definitely chocolate!

I love chocolate, always have and always will.

Moist rich chocolate desserts of all varieties… cake, cupcakes, cookies and so much more. You name it, I’m game. Pair it with even more chocolate and I’m even happier, because there is no such thing as too much chocolate. Don’t let anyone ever tell you otherwise.

I decided to combine moist Thin Mint flavored cupcakes with rich homemade pudding and fluffy whipped cream, creating an irresistible layered dessert! Chocolate heaven! My kids were in love. I was in love. And you will be too! These came together in a pinch, using Pillsbury’s new Girl Scout Cookie flavored cupcake mix. Easy to whip up and bake, with fantastic results.

You may or may not be aware of my love for cupcakes. I absolutely prefer them over full size cake. Cute, personalized portions with perfectly piped frosting or in this case, a coating of rich ganache.

The fun thing about this recipe is you can opt for saving the tops of the cupcakes for eating as is, topped off with rich ganache or reserving for use in the parfaits. Trust me, you’re going to want to eat the ganache covered cupcake tops. It’s ridiculously good. Serve with some extra whipped cream for a fun treat.

Double Chocolate Thin Mint Parfait

A flavorful layered dessert, featuring moist thin mint cake, rich homemade pudding and fresh whipped cream. A fun dessert for the entire family!

Ingredients
 

  • 1 batch prepared Pillsbury Thin Mints Cupcakes

Pudding:

  • 1/2 C unsweetened cocoa powder
  • 3 Tb cornstarch
  • 1/4 tsp salt
  • 1 C heavy cream
  • 1 egg yolk
  • 1 C whole milk
  • 1/4 C granulated sugar
  • 1/2 tsp mint extract
  • 4 oz semi-sweet chocolate, chopped

Whipped cream:

  • 1 1/2 C heavy cream
  • 1/4 C powdered sugar
  • Thin Mint cookies for topping

Instructions
 

  • Prepare cupcakes as directed. 
  • While cupcakes bake, prepare pudding. In a medium bowl, sift together cocoa powder, cornstarch and salt. In a medium bowl or measuring cup, whisk together heavy cream and egg yolk. Pour liquid into cocoa mixture, mixing with a wooden spoon until smooth and thick. 
  • In a medium saucepan over medium heat, combine whole milk and sugar. Whisk gently to dissolve sugar. When bubbles form around the edge of the saucepan, remove from heat and whisk in thick cocoa mixture until smooth. Return to medium-high heat and bring to a boil. When large bubbles form, remove from heat, stir in chopped chocolate and mint extract. Whisk until completely smooth. Transfer to a clean bowl, press plastic wrap to the surface and cool to room temperature. 
  • Prepare whipped cream. In a medium bowl, beat together heavy cream and powdered sugar until nearly stiff peaks form. Transfer to the refrigerator until ready to use. 
  • If cupcakes have been dipped in ganache, slice off the top of at least 6 cupcakes. Cut the bottom portion into small pieces. 
  • Using desired individual serving dishes, create layers of cake, followed by pudding and whipped cream. Repeat until all ingredients have been used up. Cut up additional cupcakes as needed. Piping bags or spoons may be used to add both pudding and whipped cream to the serving dishes. Garnish with a single Thin Mint cookie. Enjoy immediately or chill until ready to serve.
