You know how retailers are notoriously awful about pushing holidays way before their time? Christmas in August. And making matters worse… Halloween rolls right into Christmas, passing over Thanksgiving all together. What gives? My favorite food holiday of the year and they treat it like it doesn’t matter. Let’s not forget how Valentine’s Day rolls right into Easter, skipping right over St. Patrick’s Day. Maybe it’s a lesser holiday but it still deserves to be celebrated. Maybe it’s more that I don’t want to see Easter goodies before my birthday even hits.
I’m sort of flip flopping here because normally I hate seeing stuff early, but a month early isn’t really early if you ask me. So, of course when you want to find early holiday supplies, just because really, they don’t have them. I’m probably 1 out of 100 people that was hoping to find Valentine’s *stuff* at Target this week. I was disappointed to only find Christmas remnants, exercise and cleaning supplies. Not at all what I was hoping for. Move over workout gear, hello baking goodies. Maybe next week I’ll have better luck. They can’t hold out forever. I can’t possibly be the only one excited for the next holiday.
You certainly don’t need me to tell you it’s cold out but brrrr…yeah. I hope you’re all staying warm. And I want to help with that as much as I can. My method is of course sharing must make recipes to warm you up. I wanted to continue sharing some super comforting and easy to make soups! Seriously, slow cooking just makes life so much easier. If you don’t have one yet, get one. You’ll love it! No more standing over the stove waiting for soup to boil. Just toss it and go about your business. Nashville marathon perhaps? ;) Yes, that’s my new obsession. I’m trying to catch up as quickly as I can, which shouldn’t be too hard since they’re only on the second season. Eek. Okay…

Cook Time: 4 hours and 30 minutes
Total Time: 5 hours
Your favorite chicken enchiladas turned into an easy and flavorful slow cooker soup.
3 chicken breasts, trimmed
3/4C onion, chopped
3/4C green bell pepper, chopped
3 cloves garlic, minced
11oz corn, drained
14oz petite diced tomatoes, drained
15oz black beans, drained and rinsed well
3/4 tsp ground black paper
1 1/2 - 2 tsp salt
4C chicken broth
1/2C enchilada sauce
1C heavy cream
Monterey Jack cheese, shredded
Green onions, chopped
Seasoned tortilla strips
To the bowl of a 5-6 quart slow cooker, add whole uncooked chicken breasts, vegetables, beans, salt, pepper, chicken broth and enchilada sauce. Cook on high for 4 hours. Remove chicken, shred and return to slow cooker. Stir in heavy cream. Cover and continue cooking on high for an additional 30 minutes.
Divide among bowls, topping with cheese, onions and tortilla strips.
