Slow Cooker Lobster Chowder
It’s hard to believe two years have passed already. I started this journey as a way to share my adventures in the kitchen and favorite recipes. I truly didn’t expect anyone to read my ramblings, forget actually trying my recipes.
Because parties and celebrations should be shared and because this little blogging thing is even more special because of you, I cooked up something super special to share for my blogging anniversary. This would be wonderful as a special Valentine’s Day meal too.
I’m not entirely sure how the idea hit me, but I’m glad it did. Lobster is one of those things that is usually reserved for special occasions, and this is just that! This is a traditional creamy chowder, spiced just right and loaded with potatoes and lobster. It’s warm, comforting and totally decadent.
Slow Cooker Lobster Chowder
Ingredients
- 1 1/2 lb cooked lobster meat
- 3 1/2 C potatoes, peeled and cubed
- 15 oz corn, drained
- 3/4 C yellow onion, chopped
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1 tsp thyme
- 1 tsp salt
- 1 tsp basil
- 1/2 tsp white ground pepper
- 1 tsp dried minced garlic
- 1/4 C all purpose flour, or 2Tbsp cornstarch for a gluten free option
- 1 jalapeño, diced
- 4 slices bacon, optional
- 1 1/2 C lobster stock
- 3 1/2 C Half and half, or heavy cream
Instructions
- Add all ingredients to slow cooker, minus lobster meat and bacon. Stir gently.
- Cook bacon. Drain on paper towels. Chop and set aside. Carefully add bacon grease to slow cooker.
- Cover and cook on high for 4-5 hours.
- Prepare lobster meat, by cutting into bite size pieces. When one hour remains, add cooked lobster meat to slow cooker. Gently stir. Cover and continue to cook.
- Divide among bowls. If desired, sprinkle with chopped bacon and serve with crackers. Store chilled in airtight containers for up to several days.

We’ll be traveling back from our vacation to Florida on Valentine’s Day. I hope it’s not a nightmare. I have the following day off from work, so maybe we’ll do something special then.
Funny thing, we will actually be going to a shooting range. As I get older I realize that Valentines Day is just a gimmick for retailers to make a lot of money, so I decided to celebrate by learning to shoot a gun! and he loves the idea… :)
For Valentine’s Day, I like to bake conversation hearts cookies, chocolate covered oreos and chocolates to send to all my single friends to show them that I love and care about them. Valentine’s Day doesn’t just have to be about having a special “someone,” it can be about thanking all the people in your life who are special to you! :)
I have no plans for Valentine’s day and I’m okay with that!

I’m Heather and this year for Valentine’s day I’ll be doing work for my dietetic internship! Maybe if I’m lucky I can get in some valentine’s bikram yoga in too! Because really, what says valentin’s day more than a room full of sweaty people in strange contorted positions!? :D
The hubs will be out of town on business, so it’ll be a cat and/or girls’ night for me!
I’m so full of want right now, both for mini Le Creuset’s and for this recipe.
Valentine’s plans are as follows – sleeping in late with my boyfriend, taking the long way on our walk to our favorite restaurant.

Happy Blogiversary! I totally missed my 3 year last month.. Oh well!
My Valentine’s plans will probably just be cooking dinner for Boyfriend and then just hanging out. We never really do anything big.
I am hoping to be able to go out to dinner with my husband for Valentine’s Day, but we shall see. Babysitting is a little tough to get when you have two special needs kids. :-)
No plans as of yet, but we will probably stay home and cook a nice dinner!

I am taking my girlfriend to her favorite restaurant on valentines day and then that weekend I am bringing her to a bed and breakfast on the water in Rhode Island.

I’m planning some fun meals during the day for the kiddos (heart shaped eggs for breakfasts & hear pizza for lunch) Then a special romantic dinner for my husband (not sure what yet) followed by some bubbly and fondue after the kiddos go to bed!

Unfortunately, the Mr is out of town for work on V-Day this year. But since I feel like everyday is Valentine’s Day with all the recipe testing I do for my site, I’m ok with it. We’ll see how I feel when the day actually rolls around. Cute giveaway!
