Hair accessories have a way of disappearing in my house. Elastics going missing makes sense to some degree. Eventually they get stretched out or the cats have hid them, batting them around. But hair clips? That one doesn’t make any sense to me. Somehow they end up all over the house and then when we need them, we can’t find them. We had a slew of them too. I’m sure someday I’ll come across them in a really random location…and of course, when I we don’t need them. It’s always the way.

I’m not sure if I did an update on the mattress situation. So, here it is… I love it. They say there’s a break in period for Tempurpedic mattresses. I didn’t believe them. No other mattress has a break in period. They’re just ready to be slept on. Basically for the first week after getting the new mattress, I woke up with backaches. I thought for sure it wasn’t going to get better. But it did. And now it’s seriously so comfortable. So, that break in period… it’s real. Also, their pillows are equally amazing. In case you were wondering…

Also, why is choosing paint colors so difficult? I feel like choosing between drastically different colors wouldn’t be so hard, but shades of the same color… not so much. I thought I picked out a shade of light grey, but it turned out to be much darker than I initially thought. Thankfully I only painted a small patch on the wall to test it out. Now I have to go bak to the drawing board and figure out which lighter shade is the shade. I’ve been procrastinating on that in a major way. I have swatches to cut out and tape to the wall… because I now refuse to buy another sample color that will potentially never be used again. Maybe by next week I’ll have a color picked out. Stay tuned…

Ridiculously amazing homemade strawberry curd.

I’d been meaning to make this curd for ages. The problem is, strawberries disappear in our house FAST. Next to apples, they’re my absolute faaavorite. So sweet and juicy. They just scream Spring and Summer to me.

Strawberry curd requires a bit more hands on time than lemon curd, but it’s worth every second. So much flavor packed into a small package. And it’s ridiculously easy!

This easy homemade strawberry curd is perfect for all of your breakfast and dessert needs! Slather it on your morning pastry or pair it with your favorite dessert… or eat it by the spoonful. Because… trust me, you’ll want to. It’s just that good.

Strawberry Curd

Prep Time: 5 minutes

An easy recipe for homemade strawberry curd. A great addition to your favorite desserts and morning pastries!

Ingredients
 

  • 1 lb strawberries, pureed
  • 1/4 C unsalted butter
  • 1/2 C granulated sugar
  • 1 Tb cornstarch
  • 1 Tb lemon juice
  • 4 egg yolks

Equipment

Instructions
 

  • Puree strawberries. Press through a fine mesh strainer into a clean bowl.
  • In a small saucepan set over medium heat, melt butter. Remove from pan from heat. Whisk in sugar, cornstarch, strawberry puree and lemon juice. Whisk in yolks one at a time, whisking until fully combined. Return to heat. Continue whisking occasionally until thickened. Remove from heat. 
  • Press curd through a fine mesh strainer to remove any impurities. 
  • Transfer to desired storage container. Cover and cool to room temperature. Use immediately or chill until ready use.
