Spinach is one of those amazing vegetables that you can eat raw or cooked, made into pesto or thrown into a smoothie. But, for some reason I’ve always had my go to methods for it. Sautéed and added to an existing dish as a fun addition or as an alternative to basil for making pesto. Both are huge wins in my book.

I feel like winter is packed full of comfort food. It’s cold and gloomy or snow covered and we just want something warm and fatty to eat. But, now that it’s spring, with summer just around the corner, everyone is itching for healthier food to eat. It’s the normal food cycle, or rather, the normal seasonal roller coaster of what we’re craving! And, honestly, I’m totally okay with that.

One of my new go to salads pairs some of my absolute favorite items into one incredible and super simple dish. It’s a perfect seasonal meal, full of fresh food! And, a great dish to share or save some for later! If you’re just prepping for one, prepare everything as directed and box the rest up for later! Then you’ll have a super quick meal the next day.

I paired Earthbound Farm organic baby spinach with juicy red strawberries, seasoned grilled chicken and cubed cheddar! Cheese on a salad is a must in my book. The star of the dish is truly the spinach. It wouldn’t be a strawberry and spinach salad without that! Finish it off with a light vinaigrette and you’re good to go. There are a ton of other great items you can include, but I think you’ll find that simplicity can be even better than an overloaded salad.

And since you have not only a serving of fruit, veggies, protein and dairy in this delicious salad… all you need is some grains, if you so choose, and then you’d have what’s considered the perfect meal. Voila! Easy peasy and super healthy. An absolute must make.

Strawberry Spinach Salad with Grilled Chicken

Bright red strawberries, paired with fresh spinach and grilled chicken makes for a fun and flavorful salad. This easy salad is perfect for lunch or dinner!

Ingredients
 

  • 1 chicken breast
  • Salt
  • Pepper
  • Cayenne pepper, optional
  • 1 oz mild cheddar cheese, cubed or shredded
  • 1/2-3/4 C strawberries, hulled and quarted
  • 5 oz Earthbound Farm organic spinach
  • Light dressing or vinaigrette

Optional additions:

  • Sliced red onions
  • Avocado
  • Bacon
  • Nuts

Instructions
 

  • If using a stovetop grill pan, preheat over medium heat. Lightly spray with favorite cooking oil. Pound chicken to an even thickness. Season both sides with salt, pepper and optional cayenne pepper. Cook in preheated pan for 3-4 minutes per side or until the internal temperature reaches 160-165°F. Transfer to a cutting board to rest. 
  • Cube or shred cheese. Hull and quarter strawberries. Slice chicken into strips.
  • Add spinach to 1 medium serving bowl or divide between two large salad bowls. Arrange cheese, strawberries and chicken as desired, in addition to other desired toppings. Pour desired dressing over salad and serve or enjoy.
