For as long as I can remember I’ve always been a huge fan of sherbet. But what I didn’t know until a few years ago, is that there is only one r in there. I grew up saying sher-bert, not sher-bet. And of course that’s still how I pronounce it. Call me confused. Another word that either boatloads of people mispronounce or that clearly should be spelled very different. Do you call it sher-bert or sher-bet? I’m curious if it’s a regional thing or what?!

Next to orange sherbet and lime, my favorite is watermelon. That is of course thanks to Friendly’s Wattamelon roll… and yes, it’s spelled that way. Such a fun seasonal treat! Watermelon sherbet with chocolate chips, wrapped in a lime sherbet, acting as the rind. It’s an absolute must and you always know it’s almost Summer when it finally hits store shelves!

While this may not be a full blown wattamelon roll creation (maybe someday I’ll attempt it), I’ve been eager to make a homemade watermelon sherbet for quite some time. Of course chocolate chip “seeds” were necessary. Chocolate and watermelon go together remarkably well. But that really shouldn’t be a huge surprise, chocolate goes great with almost anything.

Watermelon Sherbet

Refreshing homemade watermelon sherbet with mini chocolate chip "seeds". A fun frozen treat for hot Summer days.

Ingredients
 

  • 2 C pure watermelon juice, chilled
  • 1 1/2 C heavy cream
  • 3/4 C granulated sugar
  • Pinch salt
  • 1/2 C mini chocolate chips

Instructions
 

  • In a large bowl, combine chilled pure watermelon juice with sugar and salt, stirring to dissolve sugar. Stir in heavy cream. Churn according to manufacturer's directions. In the last 10 minutes of churning, slowly add mini chocolate chips.
  • Transfer mixture to a freezer safe container. Freeze until solid.

Notes

Recipe serves roughly 4-6, yields 1 quart.
** Watermelon juice may be found in some stores near other organic juices. Alternatively, blend watermelon chunks until smooth and strain out the solids.
