Today Lauren of Keep It Sweet Desserts is here to celebrate apples! She has changed my world with this recipe. I’ve thrown apples into all of the traditional items from pies to muffins and many other breakfast goods. I never thought to add them to blondies though. No wonder she has a successful sweets business! If you want cookies or brownies delivered, she’s your girl. 

There are a few things that get me excited for fall: pumpkin, boots, butternut squash, cool crisp air, cozy sweaters, a fresh start, and the warm smell of cinnamon coated apples baking in any form.

All of those things always give me a good feeling inside. And even though I’ve always thought of myself as a summer girl, there is something about autumn that brings me so much joy. Maybe it is that I can eat pumpkin all year round, but it is easier to find when the Halloween candy is on the shelves. Maybe it is that I always associate the start of fall with reconnecting with friends. Maybe it is trading in shorts and t-shirts for less revealing comfy sweaters. Maybe it is the High Holidays where I get together with family. Maybe it is that I met my husband in the fall 9 years ago. But while all of that is nice, I think the biggest reason to love this new season is the opportunity to dive back into comfort foods like chili, lasagna and warm apple crisp.



When Rachel invited me to be a part of the Apple a Day Party this month I was more than excited. It might just be the unofficial beginning of fall, but I’m ready for pumpkin in my oatmeal and apples in my desserts.

Of course deciding what to make was tricky. So I decided to go with something I’ve been loving lately, blondies, and fill them with chunks of apples and spicy cinnamon chips. They are chewy and gooey and, best of all, truly highlight the flavors of warm apple pie. You might even like to warm them up and top them with ice cream, because now that our bathing suits are packed away, it is time to have fun with food.

Apple Cinnamon Blondies

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Yield: 12

Ingredients
 

  • 1 1/2 C light brown sugar
  • 1/2 C unsalted butter
  • 1 1/4 C all-purpose flour
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 2 extra large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 C granny smith apple, skin on, chopped
  • 1/2 C cinnamon chips

Instructions
 

  • Preheat oven to 350°F; spray an 11-inch tart pan with non-stick cooking spray and set aside.
  • Melt butter and brown sugar in a heavy duty saucepan over medium heat stirring constantly; remove from heat and set aside.
  • In a medium bowl, whisk together flour, salt, cinnamon and baking powder. In a separate large bowl, whisk eggs and vanilla; add melted butter and sugar mixture and whisk until combined. Slowly whisk in dry ingredients just until combined. Fold in chopped apples and cinnamon chips.
  • Pour batter into prepared baking pan and bake in oven for 25-30 minutes or until a knife comes out clean from center
  • Allow to cool; when ready to cut, separate pan by carefully running a knife around the edges of the blondies and then pushing up from the center of the bottom of the pan; slice blondies evenly into triangles and enjoy.

Notes

If you prefer to peel your apples you can, I just like to leave the skin on because I like the taste and it saves time. If you do not have a tart pan, an 8 or 9 inch baking dish will also work, cooking times may increase.
