It sometimes amazes me that a total stranger could be so kind. It’s honestly sad that I might think that really, because you would hope everyone would be kind and helpful to everyone, especially when in need. Those moments of pure kindness stick with you. They can truly make a lasting impression on someone.

Like the owner of a car shop removing part of my front bumper on the spot, without hesitation and free of charge, so I could drive home after an accident. It was my first accident, I was just out of high school and my parents had just left the country for a few weeks. That figures, right? But this total stranger helped me when he didn’t have to.

A stranger offering to help me in the security line at the airport while I traveled alone with my then 22 month old. Traveling is stressful enough, but traveling with a young child adds to that. No one had to help, but that kind person behind me did.

Or the Mr helping a neighbor get unstuck from a snow bank one winter. He was heading home from work and happened upon the neighbor boy stuck and waiting on his dad to show up. The Mr could have driven by, or just checked on him, but he went a step further and actually helped get him out of the snow bank.

Apple Cinnamon Streusel Muffins

Moist and fluffy cinnamon muffins with chunks of tender apples throughout, finished off with a crisp streusel topping.

Ingredients
 

Topping:

  • 1/4 C light brown sugar
  • 1/4 C all purpose flour
  • 1/2 tsp cinnamon
  • 2 Tbsp unsalted butter, softened

Muffin:

  • 1/4 C unsalted butter, softened
  • 1/2 C light brown sugar
  • 1/4 C granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 3/4 C plain yogurt
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 C all purpose flour
  • 1 1/2 C apples, peeled, cored and chopped

Instructions
 

  • Preheat oven to 350°F. Prepare a muffin pan with 12 liners.
  • In a small bowl, combine topping ingredients. Work together with a fork until combined and crumbly. Set aside.
  • In the bowl of a stand mixer, or large bowl, cream together butter and sugars. Mix in egg, vanilla and yogurt until nearly combined. Add remaining dry ingredients (minus apples), mixing until just smooth. Stir in apple chunks by hand.
  • Divide batter between prepared liners. Fill each liner roughly 3/4 full or one large heaping scoop per liner. Sprinkle with topping.
  • Bake for 20-25 minutes or until a toothpick inserted only has a few moist crumbs clinging.
  • Cool on a wire rack. Store in an airtight container.
