Apple Pie Bread {Guest Post}

Let’s talk cravings, k? Julia of Fat Girl Trapped In A Skinny Body¬†always has me cracking up over her cravings. I think this is just one way we’ve bonded, peculiar and sometimes down right random cravings… even when not pregnant. Seriously. Most girls hoard shoes, bags or nail polish. I think she has a secret stash of peanut butter and cheese somewhere in her house. Her cravings lead to some incredible dishes, including this one! Apple pie meet bread…meet belly.¬†

These past couple of weeks I have had a serious craving for pie; apple pie and pumpkin pie in particular. The craving got so bad I almost bought one of the mini pies from Starbucks. Knowing it wouldn’t satisfy my craving, I refrained. But, that meant the craving was still there and I still had no desire to bake a pie. I was in quite the dilemma. I mean, that’s just pure laziness because it’s not that hard to make pie, I just kept finding 800 reasons why I shouldn’t make it. So instead, I made an apple pie bread. Sometimes I’m thankful for my laziness.

Good news, my craving is satisfied and I didn’t have to resort to mediocre coffee shop pastries.
The crumble on top is like an apple crumble pie, buttery, crunchy, sweet.
The shredded and diced apples lend to a little bit of apple flavor and apple texture in every bite.
The vanilla bean cream cheese swirl is my ‘a la mode.’

This is the perfect kind of bread for a brunch with the girls or for dessert (with an actual scoop of ice cream??!!). Um, or maybe even just for a normal Tuesday morning breakfast, because that’s when I ate it. And then I had it again for lunch and for dessert. I told you, I had a craving, and this bread may have satisfied it, but it’s so good it just begs me to keep eating it.

Yield: 1 loaf

Cook Time: 65-75 minutes

Apple Pie Bread

Ingredients:

1 3/4 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp apple pie spice
1 egg
1/3 cup vegetable oil
1/3 cup apple juice
3/4 cup brown sugar
1 1/2 cups shredded apples
1 cup chopped apples

Vanilla Bean Cream Cheese Swirl
1 8 oz package cream cheese, room temperature (I used low fat)
1 egg
1/4 cup powdered sugar
1 tsp vanilla bean paste (or use 1 tsp vanilla extract)

Crumble
2 tbsp flour
4 tbsp sugar
1/2 tsp apple pie spice
2 tbsp butter, cold

Directions:

Preheat the oven to 350 degrees.
Grease an 8 1/2 x 4 1/2 loaf pan.
To make the bread batter, using a wooden spoon mix the egg, vegetable oil, apple juice, and brown sugar in a large bowl. Add in the apples.
In a separate bowl sift the flour, baking powder, baking soda, salt and apple pie spice. Mix the dry ingredients into the wet ingredients and stir until combined. (Mixture will be thick). Set aside.

For the swirl, whisk all the ingredients in a small bowl, set aside.
For the crumbled. mix the flour, sugar and apple pie spice in a small bowl. Cut in the cold butter until the mixture resembles course crumbs.

To make the loaf, pour half the bread batter into the pan then pour in the cream cheese mixture. Pour the remaining bread batter over the cream cheese then pour all of the crumble mixture on top. Lightly press the crumbs into the batter.

Bake for 65-75 minutes, until a toothpick inserted comes out clean.
Cool for 15 minutes in the pan, then finish cooling on a wire rack.
