Easy as Pie: Apple Fritters {Guest Post}

One of my best buddies is celebrating with us today. Katrina of In Katrina’s Kitchen has done something few seem to be willing to do anymore and that makes me happy. She fried apples! Not baked, but fried! I’ve never had an apple fritter but boy do I want one now! I think these would be a great addition to a scoop of ice cream. PS Do you have any idea how torturous it is to look at food pictures and posts before eating breakfast? I should know better by now.

We are a house divided when it comes to apples. I like them green and room temperature; my husband likes them red and ice cold. It’s amazing we are still married after all these years. This is important stuff! Although I need to remind him occasionally who is the apple expert in our home I am a nice person so I buy him those ginormous Red Delicious apples and put them in a huge bowl in our refrigerator. I didn’t even steal from his stash to make these Easy as Pie Apple Fritters.

It’s not often that I fry something and when I do there’s a little part of me that tries to make myself feel guilty. Normally I just shove a cookie in her tiny mouth and tell her I’ll listen to her concerns in about 20 minutes. Anyway I knew that it was okay to bring this dessert to Rachel’s apple party because she loves apples and **bonus** she’s not afraid of fried foods! Woohoo!

This apple fritter really is easy to make. I like it because it is technically more apple than fritter so that makes it healthier, right? ;) Core and slice up an apple, cover it in pancake batter, and give it a minute in some canola oil. A dusting of powdered sugar is the perfect final touch!

Easy as Pie: Apple Fritters

Ingredients:

2 apples, peeled and cored
2 Cups pancake batter, prepared
1 teaspoon pumpkin pie spice
Canola oil
Powdered sugar

Directions:

  • In a deep fryer or large skillet heat oil to about 350. How much you need will depend on the size and depth of the pan you are using.
  • Slice your peeled and cored apple into thin 1/8 inch strips.
  • Add pumpkin pie spice (or apple pie spice if you have it) to your prepared pancake batter.
  • Dip apple rings in batter before frying for 1 - 2 minutes until golden brown. Carefully flip about halfway through.
  • Remove with tongs or a fork and place on a paper towel lined plate.
  • When finished frying and slightly cooled, dust with powdered sugar if desired.
