Mother’s Day is but days away, do you have plans made? Cards purchased or drawn and signed? Homemade is always best and that goes for just about everything… from the sweet cards children make to the food made with love, whether it be for breakfast, brunch or even a sweet dessert any time of day!

You’ve probably heard about all of the new donut creations out there, from the cragel to the doughscuit, croisbun and even the cronut. But have you heard about the latest craze, the wonut? I’m not sure what’s next after this, but I sure was pleasantly surprised by the flavor of the wonut and how fun it was to make.

It takes more work than your average waffle, but no more work than your standard donut (or doughnut). In this case, instead of shaping dough, you’re cooking a waffle and then removing the center. Pretty easy and if you like waffles… and of course donuts, then this creation is for you!

A waffle bursting with fresh blueberries and strawberries that is then deep fried to a perfect golden shade and coated in a sweet lemon glaze, using McCormick’s pure lemon extract. It couldn’t be more fun and it’s something you’ve definitely got to try!

Berry Wonuts with Lemon Glaze

Homemade waffles, bursting with blueberries and strawberries that are deep fried and coated in a sweet lemon glaze. A fun treat for breakfast, brunch or dessert!

Ingredients
 

  • 2 C waffle mix
  • 1/2 C blueberries, fresh
  • 1/2 C strawberries, fresh
  • 2 C powdered sugar
  • 1 tsp McCormick lemon extract
  • 4 Tbsp water
  • Vegetable oil for frying

Instructions
 

  • Preheat waffle iron.
  • In a medium bowl, prepare waffle mix as directed. Remove stems from strawberries and discard. Chop strawberries into ½-inch pieces. Add strawberries and blueberries to waffle batter, stirring gently with a rubber spatula.
  • Lightly spray waffle iron with baking spray. Evenly spread batter to just cover waffle iron. Do not overfill. Cook until golden brown. Remove to a wire rack to cool. Repeat with remaining batter.
  • Using a sharp knife or cookie cutter, carefully remove the center of each waffle.
  • Heat vegetable oil in a deep fryer. Alternately, add 3-4 inches of vegetable oil to a large stockpot. Heat oil to 350°F.
  • Fry one waffle at a time, cooking for 1 minute on each side or until deep golden. Drain on paper towels.
  • In a medium bowl, beat together powdered sugar, lemon extract and water. Mix until smooth, adding additional water as needed for thin icing consistency.
  • Dip cooled waffles in icing. Drain on a wire rack over a large baking sheet.
  • Enjoy immediately.

Notes

*Your favorite homemade waffle recipe may be used in place of box mix, cook as usual.
