Cake Batter Rice Krispie Treats

I made these Monday morning, before breakfast. It was necessary for so many reasons.

One being that seems to be the best time to get quick recipes done. The kids are all happy and wanting to play. I could easily take an hour to get breakfast ready and that’d be okay with them… most days. Okay, maybe just some days.

The second reason, at least for wanting to make these – my girls have never had rice krispie treats. Ever! I mean how on earth did our oldest get to be 4 1/2 and not have a single rice krispies treat? That’s a total fail on my part.

The third reason being that I needed to plan ahead. You see… today is my birthday but I couldn’t whip up something today to share with you today. Okay, I could but that’s not how it works most of the time. Food bloggers bake and cook ahead of time, planning for the big day – whatever day that may be. I wanted to celebrate with you… with sprinkles and deliciousness.

Sadly, this is also the first time I’ve ever made them myself. It’s a pathetic truth. I haven’t eaten one in years either. I don’t know how that happened but I can promise you this… there will be many more rice krispie treats in my future. I have every intention of experimenting with them now.

These are quick to whip up and super tasty. My favorite time to eat them is when they just begin to set – they’re still a tad gooey but are starting to hold their shape. Ahh delicious! The cake mix and vanilla give it a nice light flavor. The sprinkles are an absolute must, no skimping! Sprinkles make everything better.

Cake Batter Rice Krispie Treats

Ingredients:

3tbsp butter
1/2tbsp vanilla
1 - 10 oz. bag mini marshmallows
1/3C vanilla cake mix
6C Rice Krispies
1/4C rainbow sprinkles

Directions:

In a large sauce pan over low heat, melt butter. Add vanilla and stir. Add marshmallows, stir and toss as they begin to melt. Continue to stir. When marshmallows are completely melted add one tablespoon of cake mix at a time, stirring well after each addition. Pour in rice krispies. Stir until coated well. Sprinkle in half of the sprinkles (2 tablespoons). Stir to disperse throughout.

Grease a baking dish with Pam or your favorite greasing method. Spoon rice krispie mixture into prepared pan. Spray your hands with Pam and press down on the mixture to spread out. Sprinkle with remaining 2 tablespoons of sprinkles. Let sit for at least 30 minutes before slicing.

Store covered.
