And just like that… everything is Christmasy! Houses everywhere, decorated and sparkling with strings of lights. It seems that decorating was the popular thing to do this weekend, next to shopping. I’ve been seeing a ton of gorgeous tree pictures lately. We’re holding out for at least another week before decorating, which is a bit odd for us. Usually we decorate the day after Thanksgiving, but this year we got lazy. A good lazy, lounging together as a family. We ended up seeing the new Disney movie Moana… as I’m sure many others did too! The kids loved it. I honestly was expecting a bit more. Don’t get me wrong though, it was cute, but it just didn’t quite meet my expectations. Did you make it to the movies this weekend… or maybe get a chance to watch Gilmore Girls?!

We’ve now moved on from questions about when Thanksgiving is, to when Christmas is. It’s time for a countdown! When my oldest was in kindergarten, she came home around the holidays with a super cute paper chain and some typed up paper attached to the top. It talked about counting down the days until Christmas. You cut a single paper off every day and then you can visually see how much closer you’re getting to the big day. I may have to find that and whip up a 25 link chain with the kids today! I’m surprised that came to mind today instead of a few weeks from now…like has happened in the past! It’s nice to be on the ball! Do you do any fun countdowns leading up to special events or holidays?

The holidays mean sweets. Lots and lots of sweets! There are holiday parties for just about everyone and everything, which means an excuse not only to make sweets but eat them! It’s a season to indulge.

Whatever you do, don’t diet during the holidays. You’ll be miserable. Wait until January if you must. Until then…

Chocolate and cookies and so much more!

I love kiss cookies. An excuse to eat both a cookie and chocolate! But… why not make them even more incredible with extra chocolate?!

These are a chocolate lovers dream! Triple chocolate kiss cookies with a fudgy brownie like center and a crisp sugary coating. A perfect addition to any holiday party!

Chocolate Kiss Cookies

Triple chocolate kiss cookies with a super chocolatey center and crisp sugary coating. A fun holiday cookie for chocolate lovers.

Ingredients
 

  • 3/4 C unsalted butter, softened 
  • 3/4 C granulated sugar, divided
  • 1/2 C light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 C unsweetened cocoa powder
  • 2 oz semi-sweet chocolate, melted
  • 2 C all purpose flour
  • Milk chocolate Kisses, unwrapped

Instructions
 

  • Preheat oven to 350°F. Prepare a baking sheet with a silicone baking mat or parchment paper. Add 1/4 cup granulated sugar to a small bowl, set aside. 
  • In a microwave safe bowl, melt chocolate in 30 second intervals. Stir after each interval. Repeat until fully melted. 
  • In a large bowl or stand mixer, beat together butter, 1/2 cup granulated sugar and brown sugar until light and fluffy. Mix in egg and vanilla, followed by salt and baking powder. Scrape bowl as needed. Mix in cocoa powder, followed by melted chocolate. Add flour one cup at a time, increasing after each addition. Mix until fully incorporated. If dough is too sticky to work with, chill for 15-20 minutes before continuing. 
  • Using a small cookie scoop, scoop and shape dough into smooth balls. Roll in granulated sugar. Place sugar coated dough balls on prepared baking sheet, spaced 2 inches apart. Bake for 10 minutes. Immediately press an unwrapped chocolate kiss into each cookie. Immediately transfer cookies to a wire rack to cool completely and allow chocolate to set. 
  • Once chocolate has completely set, cookies may be stored in an airtight container.
