Garlic Monkey Bread

I want to live in a universe where bread is considered healthy and good for you. I want to live in a world where bread is enjoyed at every meal, in place of the bad for you veggies. Broccoli is despised, along with cauliflower, spinach and squash. We rejoice over cheese and embrace it’s deliciousness. Butter is on hand by the barrel-full to slather away on fresh baked goods. Am I going to far?

Whether you agree with me about this alternate universe or not, this garlic monkey bread is absolutely necessary in your life. It needs to be made immediately. You will thank me… your hips may not, but that’s only because this bread is practically irresistible. You’ll eat one to taste and another for snack. Then they’ll be taunting you from the other room so on a pass by you might just grab another to sneak while no one is looking. Oh… that’s just me? Yeah, I have issues with bread, especially delicious warm bread full of flavor.

I love this bread for so many reasons. The dough is super easy to make and work with. I mean, really easy.  It has delicious flavor from herbs and garlic. Let’s not forget the last minute addition of warm butter and parmesan before baking. Make a double batch, or jumbo portions… or both.

Yield: Yields roughly 1 dozen rolls or 6 jumbo.

Garlic Monkey Bread

Ingredients:

3 1/2C bread flour
1 tbsp sugar
1 pkg instant yeast (rapid rise)
1 1/4 tsp salt
1/2 tsp basil
2 cloves garlic, minced
2 tbsp olive oil
1/4C milk
1C 2tbsp warm water
3 tbsp butter, melted
3 tbsp parmesan cheese

Directions:

In a large bowl or stand mixer, add bread flour, sugar, yeast, salt, basil and garlic. With mixer on low, begin adding liquid ingredients (olive oil, milk and warm water). Mix until fully combined and dough is no longer sticking to the bowl. If necessary, add additional flour by the spoonful until dough no longer sticks.

Transfer dough to a large bowl greased with olive oil. Cover and let rise in a warm location for 1-2 hours.

Preheat oven to 350 degrees. Using a regular or jumbo size muffin tray, spray cavities with olive oil or favorite baking spray. Break off chunks of dough, roll into 1 inch balls. Divide balls among muffin cavities.

Brush tops of dough with melted butter. Sprinkle with parmesan cheese. Bake for 15-20 minutes or until turning light golden. Carefully remove rolls from tray, cool on a wire rack or basket. Enjoy warm.
