Gingerbread Chocolate Chip Cookies
The ultimate soft batch gingerbread cookie, loaded with chocolate chips! A must make holiday cookie!
I’m mostly fearless when it comes to frying food but every so often something happens that really makes me second guess making greasy food of any kind. I was making shaved steak sandwiches for dinner and you know how greasy that meat can get. I was going to remove some of the excess grease so the meat would crisp up a little faster but decided not to. The end result was a pan of popping grease and bits. One pop went straight to my eye. I had no time to react and man did it hurt. I swear it easily hurt for hours after. Obviously it could’ve been worse but now I kind of want one of those crazy hazmat suits to do any sort of frying. It wouldn’t be too weird. ;)
Thankfully cookies aren’t greasy and require no frying. At least this particular variety… and most varieties for that matter.
I’ve shared soft batch chocolate chip cookies and the perfect (non-cakey! no, seriously!) soft batch pumpkin chocolate chip cookie recipe, so I knew I had to tackle a version for the ultimate holiday baking season. I’m kind of, okay totally, in love with gingerbread flavored food, so it seemed right to make the Christmas version a gingerbread flavored cookie, packed with chocolate chips… of course!
They’re perfect… just like your favorite soft batch cookie, loaded with chocolate chips, but gingerbread flavored. They’re quite possibly my new favorite cookie and I’m positive they’ll become one of yours too! If you’re only going to make one new cookie this season, this definitely needs to be added to your list.
Gingerbread Chocolate Chip Cookies
Ingredients
- 10 Tbsp unsalted butter softened
- 1/2 C granulated sugar
- 1/2 C light brown sugar
- 6 Tbsp molasses
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 3/4 tsp ginger
- Pinch ground cloves
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 2 C all purpose flour
- 1 1/2 C semi-sweet chocolate chips
Instructions
- In a large bowl or stand mixer, cream together butter and sugars. With mixer running on low, add in molasses and vanilla, followed by remaining dry ingredients (reserving chocolate chips). Increase speed as needed until dough comes together. Mix until dough is smooth and no longer has streaks. Stir in chocolate chips by hand.
- Cover and refrigerate for several hours or until chilled through, but not firm.
- Preheat oven to 350°F.
- Use a medium cookie scoop to create balls of dough. Space 2-inches apart on a parchment or silicone baking mat lined baking sheet. Bake for 10-11 minutes. Allow cookies to rest on baking sheet for 1 minute prior to transferring to a wire rack to cool completely.
- Store in an airtight container.

Frying food or making cookies…I choose cookies every time!!! You just described one of my frying food fears. I sure hope your eye is ok. Now these cookies…I love how puffy and yummy they look. Love the gingerbread twist to them!

I hate frying, sautéing, searing, and even the first part of braising! It’s so messy and painful…and messy!

These cookies look amazing, but after mixing them up, the mixture was dry and crumbly. Was there a mistake in the recipe–should it have included an egg? I doubled the recipe and added two eggs. They were perfect!
This is an eggless cookie recipe. My dough was not dry at all. Occasionally with recipes calling for molasses, the dough may appear to be crumbly (smaller balls of dough) when mixed at lower speeds. Increasing the speed while mixing will pull the dough together.
I’m with you that frying is horrible sometimes. I usually make a scene, jumping back etc. Then the hubby takes over :) Ha! These cookies look amazing. Thanks for sharing.

I can’t do frying either. It’s scary and for whatever reason, I have always been wearing a nice shirt while doing it and then get oil splatters all over me.

I just made these last night and OMG they are delish! I even added walnuts :)
They were all perfectly shaped: tall and round. I have been trying to achieve this shape in my regular chocolate chip cookies but it’s difficult in the humid Florida weather- at least that’s what I’m guessing the problem is.
I might add more ginger and cinnamon next time because the molasses was very strong.

So glad you enjoyed them! I’m not sure how dark yours were but mine were indeed rather dark compared to traditional cookies. If you compare these photos to other cookie recipes I have you’ll notice the difference.
I made these cookies earlier and let me tell you what…. the WHOLE house smelled like christmas. It was like the gingerbread man came in and farted. These sound delicious. I would like to make them ahead of time for a cookie swap fund raiser that I host. With that in mind I was wondering if they freeze well?
I haven’t personally frozen them but I imagine they’d be fine.

Making these cookies right. I had to add 2 eggs just to get the dough to combine. First batch is the oven, but my cookie dough is not flattening at all.
The dough definitely does not require eggs, but others have included them as well, per personal preference. This is a stiffer dough which may require more mixing by hand or increased speed, as mentioned in the notes section of the recipe.
I may make these tomorrow as it is exactly what my 6 year old requested for our building’s holiday party. But can we use cookie cutters to make star-shapes, etc as my 4 year old is fixated on doing? Or is the dough not the right consistency?
This particular recipe likely wouldn’t work well with shapes. You would have much better luck using my traditional gingerbread cookie recipe if you’re looking for both the gingerbread flavor and shapes. Good luck and have a wonderful party!

I just made these and they are chilling. My dough is more like a damp sand texture. Are there no eggs in the recipe?
Correct, there are no eggs in this recipe. It sounds as though you did not mix the dough enough. It should come together easily with the speed on your mixer increased. If mixing by hand, it will take more effort.

You forgot to add 2 eggs to your gingerbread chocolate chip cookie. I did everything you had printed and it was like sand, nothing to bind it together I added 2 eggs and it was perfect. Getting ready to bake now.
The eggs are not missing from the ingredients or directions, as this is an egg-free recipe. Increasing the mixer speed will bring the dough together nicely.
