Happy March! It’s funny how people say that at the beginning of many months. I’m pretty sure no one says happy February or January though. The worst two months of the year. Why welcome them with happy and open arms. I’d rather fast forward and skip right on over the brutal weeks of Winter.

But March… well, even if the saying goes ‘in like a lion, out like a lamb’ that won’t stop me from loving March. It means many things, from birthdays, to the beginning of Spring (only 20 more days to go!!) and thus obviously the end of Winter, and celebrations of all kinds… sports, holidays etc. It’s definitely worth being happy about and welcoming with open arms. Thankfully we’re not kicking things off with a major storm. It’s turning into a dud for us here but yes, there are still two more weeks of Winter and up here we’ve even had April Fool’s Day storms so… not holding my breath until the birds are chirping and the grass is green.

Until then, we can totally celebrate St Patrick’s day in all of it’s glory. Green, chocolate, minty things, beer everything, potatoes! You get the idea.

I made a version of these cupcakes years ago and wanted to redo them. Make a smaller batch and just generally play around with the recipe – tweaking it if you will.

If you’re looking for a fun holiday cupcake to whip up for yourself or friends, these are definitely the ones you want. Not only are these chocolate Guinness cupcakes moist but they’re super flavorful. You can whip these up by hand or in a mixer, your call. I don’t want to take the stage away from the cupcakes but I completely loved this frosting. It’s so creamy and has just the right amount of sweetness. The cinnamon really compliments the chocolate cupcakes so well. These cupcakes are definitely a must make!

Guinness Chocolate Cupcakes with Cinnamon Cream Cheese Frosting

Ingredients

Cupcakes:

  • 1/4 C unsalted butter softened
  • 1/2 C granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 C unsweetened cocoa powder sifted
  • 3/4 C all purpose flour
  • 1/4 C Guinness
  • 1/4 C sour cream

Frosting:

  • 8 oz cream cheese softened
  • 1/4 C unsalted butter softened
  • 3 C powdered sugar
  • 1/2 tsp vanilla extract
  • 3/4 tsp cinnamon

Instructions

  • Preheat oven to 350°F. Line a regular cupcake pan with 8 liners.
  • In the bowl of a stand mixer, cream together butter and sugar. Mix in egg and vanilla, followed by sifted dry ingredients. Slowly incorporate Guinness and sour cream, mixing until batter is smooth and streak free.
  • Using a large cookie scoop, add one scoop to each prepared liner. Bake cupcakes for 18-20 minutes. Allow cupcakes to rest in pan for 3-5 minutes or until easy to handle. Cool completely on a wire rack.
  • When ready to frost cupcakes, in a large bowl or stand mixer, beat together frosting ingredients until smooth. Add frosting to a prepared pastry bag with piping tip or frost as desired.
