The seasonal changing of clothes happened this weekend. I can’t get over how much clothes from the kids alone were bagged up for donations. If I didn’t hate the hassle of yard sales so much, I would’ve sold it all myself. But let’s be real… they’re a lot of work for what’s usually minimal return. And then you’re still stuck taking care of whatever doesn’t sell. It’s just good to have all of that cleaned out and be ready for thew new season! Are you a fan of holding yard sales or do you just donate to be rid of stuff quicker?

I’ve been super eager for spring to finally get here and for the most part it is. The trees are all starting to bloom! Everything will be flowering or green in the next week or so! But, now I’m eagerly waiting for May fly season to be over. They’re the worst! At least mosquitos can mostly be dealt with but I swear there is nothing that really stops May flies.

Also, have you seen this commercial? Such brilliant marketing. And fair warning, if you’re super emotional, it might make you tear up. Don’t say I didn’t warn you.

I love homemade dressings. They’re so ridiculously easy to make at home, there’s absolutely no reason at all to not make them yourself.

Store bought dressing can be cheap (and sometimes not), but there’s no customization. A huge bonus of making something yourself is that you can not only control the ingredients (where they come from, brands, organic or not etc) but you can totally make it suit your taste preferences! Want it spicier or more mild? That’s totally doable. Thinner or thicker… totally easy to manage as well.

And another huge reason I love homemade dressings, you can whip them up so fast in any quantity! Make a little for one salad, make a lot for a crowd or make just the right amount to act as a marinade for your favorite cut of meat!

Lemon Dijon Vinaigrette

Easy homemade lemon Dijon vinaigrette dressing is a quick and flavorful addition to all of your favorite salads or used as a simple marinade for chicken, fish or seafood!

Ingredients
 

  • 6 Tb olive oil
  • 3 Tb lemon juice
  • 3 tsp Dijon mustard
  • 3 tsp honey
  • 3 Tb white wine vinegar
  • 1 clove garlic, smashed into a paste or finely minced
  • 3/8 tsp salt
  • 3/8 tsp ground black pepper

Instructions
 

  • Combine all ingredients in a measuring cup or clean bowl, whisk until fully combined. Alternately, shake vigorously in a jar until fully combined.
  • Use immediately or store in the refrigerator for future use. 

Notes

Recipe yields roughly 1 cup, serves 12-16.
