Pillsbury Girl Scout Cookie Baking Mixes: Brownies and Blondie Bars

Girl Scout cookie flavored thin mint brownies at bakedbyrachel.com

Growing up, like many of my friends, I was a Girl Scout. I started out as a Brownie and moved my way up, for a few years. It was fun bonding time with my friends. A time to get together, after school, and create new crafts or go on special adventures. I have fond memories of those days. My first, and only, ski trip. Of which I spent most of the experience sliding down the bunny hill on my butt. Maybe someday I’ll attempt to tackle the hills again… someday.

There were activities done for the community, opportunities to learn many new things and of course… sell and eat the ever popular Girl Scout cookies! My favorite has always been Samoa (aka Caramel DeLites). I’m a sucker for chocolate and caramel. And that touch of coconut was killer! My mom’s favorite was always the Thin Mints. You can never go wrong with chocolate!

Classic flavors that are completely crave worthy all year round… not just Girl Scout cookie season!

Thin mints are a weakness around here. Everyone could eat a box a day by them selves. These brownies look amazing! I am going to need to give them a try!

What combination of ingredients or process makes the thin, fragile film on brownies, anybody know for sure? Kitchen chemistry gurus here??

I’m a sucker for Thin Mint cookies, but I have to admit, the Lemonade cookies were always my favorite!
