I’m a huge fan of using my slow cooker year round. If you weren’t already aware of that…you are now! I know many reserve them for the colder months, but they’re really such a handy appliance all year long.

With school starting back up around the country, I knew sharing an easy slow cooker dinner idea would be perfect! It means dinner will be ready when you are, no hassle after a long day at work and it means more time to spend with family and friends! Always a win win!

I named this recipe “Summer” corn chowder simply because it is Summer, but I also used fresh sweet Summer corn. One of the great things about corn chowder is how easily adaptable it is. You can make it year round with fresh, canned or frozen corn. I’ll absolutely be enjoying a batch of this again soon! It’s so comforting and packed full of flavor. A keeper for sure!

Slow Cooker Summer Corn Chowder

This creamy corn chowder is packed with sweet summer corn and tender chunks of potatoes. An easy and flavorful meal for any day of the week!


  • 1 C yellow onion, chopped
  • 3/4 C red bell pepper, chopped
  • 1/4 C celery, chopped
  • 2 cloves garlic, minced
  • 5-6 ears of corn or roughly 4C whole corn kernels
  • 4 C russet potatoes, peeled and cubed
  • 2 tsp salt
  • 1 tsp white or black pepper
  • 1 tsp dried thyme
  • 1/4 tsp red pepper flakes, optional
  • 3 C chicken broth
  • 1 C heavy cream
  • 3 Tb all purpose flour*
  • 4-6 slices bacon, cooked and chopped
  • Chives or green onions for garnish


  • Puree 1 cup corn with 1 cup chicken broth. Set aside. 
  • Add all remaining seasonings and vegetables to the slow cooker, reserving the last four ingredients for later. 
  • Pour pureed corn into the slow cooker, stir to combine. 
  • Cover and cook on high for 4 hours, or low for 8. 
  • After 4 hours, whisk together flour and heavy cream until smooth. Pour into slow cooker and stir to combine well. Cover and cook for an additional 30 minutes. 
  • Serve with bacon and chives or green onions. 


Recipe serves roughly 4-8.
*Use 1 1/2Tb cornstarch in place of the flour to make this gluten free.
