Ribbon Sugar Cookies

Six months ago I received a text message that immediately brought me to tears. A friend, a very dear friend, one I consider to be a best friend (even though we’ve never met) was diagnosed with cancer. Hodgkin’s lymphoma to be exact. I can’t even begin to comprehend the emotions she was going through at that moment. I tried putting myself in her shoes. We both have two young children roughly around the same ages and are both expecting a third so my mind was bouncing all over the place worrying for her, her kids and her husband…even selfishly for myself. I didn’t want to lose her. I knew her world was just flipped upside down and her head was spinning. How does someone begin comprehend and accept news like that?

Back to the first word… six. Six months ago she was given this news and this very week she is having her last chemo treatment. She’s been counting down from the start. Wouldn’t you? The halfway point hit and it was incredible, but now she’s done! The journey isn’t over. It never will be completely over, but she’s fought hard and has been amazing this entire time. I’m beyond excited for her and wish I could be there to celebrate with her. You see… she’s actually having a little end of chemo party. Why not? It’s totally something to be celebrated! Six long agonizing months are over!

Recently I had her enter a giveaway on Marian’s site. She is an amazing cookie artist. I truly mean that. Check out her work and you’ll be blown away. I’ve struggled with cookie decorating until reading some of her awesome tips. I’m still no where near as good as her or so many others but I’ve made huge improvements in decorating since coming across her site. Anyway… So my dear friend saw some pretty awesome breast cancer ribbon cookies and said ‘I need those at my party!’ It wasn’t a request or a demand but I felt a tug and a need for me to make them for her. It’s the least I can do to show I care and am excited for her that this part of her journey is over. A little celebratory treat. I have my fingers crossed they make it the 1400 miles safely and arrive in time for the party!

I used my favorite sugar cookie recipe from Martha Stewart. Original recipe states it should yield 4 dozen 2″ cookies. Who ever needs that many cookies? Below you’ll find quantities for the halved recipe.

Ribbon Sugar Cookies

Ingredients:

1/2C (1 stick) unsalted butter, softened
1C sugar
1 egg
1 tsp vanilla
2C flour
1/2 tsp baking powder
1/4 tsp salt

Directions:

In a large bowl or stand mixer, cream butter and sugar until smooth and creamy. Add egg and vanilla. Mix just until combined. Scrape bowl as needed and prior to each new addition. Add baking powder, salt and half of your flour. Mix on low. Add remaining flour and continue mixing until all ingredients are combined well.

Divide dough in half, forming into discs and wrapping in plastic. Chill for at least one hour.

Remove chilled dough when ready to use. Allow to warm up until the disc is soft enough to be rolled. Between two sheets of waxed paper, or reusing the plastic wrap, roll out dough to roughly 1/4 inch thickness... not too thin, not too thick. Cut out shapes and transfer to a baking sheet lined with parchment paper or a silpat.

Preheat oven to 350 degrees. Transfer dough shapes to freezer for 10 minutes. This helps to keep them from spreading or puffing up too much as they cook. Bake for 12-13 minutes or until the edges are just turning golden. Allow cookies to sit on baking sheet for a minute or two prior to transferring to a wire rack to cool completely.

Decorate as desired. Store in an airtight container for up to several days.
