Super Soft Chocolate Chip Cookies
Perfect super soft and chewy chocolate chip cookies that stay soft! Enjoy warm for a super ooey gooey center! A must make for all chocolate chip cookie fans!
I’ve fallen into the great summer hole. It was hard but I managed to climb out and share these amazing cookies, because you absolutely need them in your life. But first… a little recap, because it’s been a while.
My children are apparently fish. They’ve been in the pool everyday since starting summer break, except one… it rained and was too cold to swim. That didn’t stop them from asking though! It’s become part of our daily routine and I hope we’re able to keep up with that as much as possible.
I picked up a shark float a couple weeks ago, for the kids to use. I decided to give it a try yesterday. Lemme just say, they’re so much harder to ride or float on than they look. I’d say my balance is pretty good, but I tipped over super fast. Oh well! It was fun and definitely funny…for myself and everyone else. I’m absolutely obsessed with my donut float though. If you’ve been eying them but have been resisting or have just been on the search for the perfect float, this is totally it. It’s a perfect donut/ring float for an adult and it’s fun. Super comfy. I’ve actually been eying others but I’ll try to resist buying more…at least for this year.
Also, can we discuss deer flies? They’re horrible little beasts. One took a chunk out of my ankle and it hurt SO bad. It seriously itched and ached for days. Next to mosquitoes and spiders, I’d love for deer flies to vanish. I would happily live without them.
For a while I’d been searching for a nylon crossbody bag to use this summer that would hold a little bit more than I usually carry, but not a ton. Nylon because it’s super lightweight and easy to clean. I still like relatively small bags most of the time, so it was proving semi-difficult to find the right one… and the price. Seriously, why are bags so expensive? Don’t tell me that the more you spend, the better the quality because I know that isn’t always true. Sure, sometimes it is but definitely not always. I ended up discovering a nylon bag by Dooney & Bourke that seemed to be exactly what I’d been looking for, this one to be exact, in case you’ve been on the hunt too! Bonus, it was marked down $50 for a short time – some kind of special deal they were having. Totally couldn’t pass that up. It must’ve been meant to be.
I’m looking for fun summer reading suggestions! What have you read lately that you couldn’t put down? I have Me Before You on my list, but besides that, I don’t have a ton that are jumping out at me to read right away.
Okay, these cookies. Stop what you’re doing and make these. Right. Now.
These are by far my absolute favorite new cookie. I’ve always been a chocolate chip cookie fan, even more so when they’re nice and soft. Huge bonus when they stay soft… psst… these do!! Left out or in a container, they’ll stay nice and soft for days!
The super soft texture brought me back to my junior high and high school days. My dad was a teacher and often teacher meetings were held in his room, since it was one of the largest classrooms in the school. Fresh coffee and a tray of freshly baked cookies were always brought in prior to the meetings and I was always able to take one. Some weeks they were so much better than others. My favorites were the weeks they were slightly underdone and ridiculously soft. Seriously good.
If you’re like me and love a soft cookie, then you absolutely must try these super soft chocolate chip cookies. They’re sure to become a new family favorite. I know it’s going to be hard to beat these moving forward!
And like always, grab one while you can because these are definitely going to disappear fast!
Super Soft Chocolate Chip Cookies
Ingredients
- 1/2 C unsalted butter, softened
- 1/2 C granulated sugar
- 1/2 C light brown sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 3/4 tsp baking powder
- 1 3/4 C all purpose flour
- 1 C semi-sweet chocolate chips
Instructions
- In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Mix in egg and vanilla, followed by salt, baking soda and baking powder. Scrape bowl as needed. Mix in flour until fully incorporated and no streaks remain. Stir in chocolate chips by hand. Chill cookie dough for at least 1-2 hours or until it is thoroughly chilled.
- Preheat oven to 350°F. Line a rimmed baking sheet with a silicone baking mat. Scoop dough using a large cookie scoop (roughly 3 tablespoons worth of dough), spacing 2-3 inches apart on prepared baking sheet. If desired, top off dough balls with additional chocolate chips.
- Bake for 12-13 minutes. Cool on pan for 3-5 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container for up to several days or freeze for later.

When you say chill for two hours, do you mean to put them in the fridge or just leave it out?
In a recipe, to chill something always means to place in the refrigerator, never to let hang out. :)
So happy we don’t really have flies or mosquitos here in Phoenix (unless you happen to have horses). Growing up in Ohio, I used to get eaten to pieces by the mosquitos – ugh!

I am the most ungraceful person to walk the earth. I know that I would end up in the water within a second getting onto any floaty thing in the pool. I need to work on my mount lol I’d rather sit by the side of the pool munching on these cookies anyway!
I tried so hard to stay on that darn thing, but there was just no way. Regular floats aren’t a problem though. And I swear by the giant donut ones. There’s no way you can tip in those!

I am always saying bugs should go away. They attack me the second I go outside. My husband annoyingly reminds me of all the good things they do for the ecosystem. I still haven’t had him come up with a good reason for mosquitoes though.
I’m sometimes reminded that if we kill off mosquitoes, dragonflies won’t have them to eat, but surely there are other bugs dragonflies can eat… right? Definitely not a fan of most bugs ;)
These cookies look so yummy.. I have a pool and live in the Northeast. I have the deer flies and the horse flies that are around the water. I swear they must have teeth! I would look it up on the internet but fear nightmares! Stay safe!

Question! I made these and the dough was delicious, I could not stop eating it! But they did not bake well! I followed the recipe exactly, it did seem like a lot of flour, the dough was getting pretty tough. After chilling for a few hours I baked them and they didn’t seem to spread? They started turning brown though, did I miss something?!?! Thanks!
This is based off of one of my other favorite cookie recipes. The ingredient amounts and baking instructions are correct as written and should give you ideal results when followed. If you were mixing by hand, it will always take a bit more effort than using a stand mixer. Without being there to see your process in person, I can’t be 100% sure what went wrong for you. But, it sounds as though your oven may be running hot, since it cooked the cookies too quickly without allowing them to spread. They should spread to a certain degree, but not go flat and thin.
This recipe was wonderful! Most chocolate chip cookie recipes I tried got too chewy and almost hard after they cooled; the cookies didn’t stay soft at all! In this recipe, however, the cookies stayed wonderfully soft even a few days after baking! I love it, and will definitely be making it again soon!

These are amazing! They really do stay soft! They are almost better the next day. Almost. I made mini cookies so the batch went much farther for me, I think I made nearly 4 dozen. We baked up a few for ourselves every other night and I gave a 1/2 dozen to a friend! They are addicting! I already want to make more!

I’m always looking for a new cookie recipe so I was very excited to try this one but the dough came out very dry so I added about 2 tablespoons of milk. They came out of the oven very dry and holding the ball shape and they taste very muffin like. Not to sure what I did wrong. Any suggestions??
It sounds as though your measurements may have been off. I’ve made these many times without issue.
I made these tonight and apparently my large cookie scoop is bigger than the one the recipe calls for! My cookies were still under baked by the 13th minute but the edges were browned. I lowered the temp to 325 and let them cook another 6 minutes. I let them cool completely on the sheet and 10 minutes later they were perfect. The edges were crispy but it added a welcome texture to the bite. The cookies were very soft, so soft in fact that they broke in half when my kids grabbed one but definitely not in a bad way. This recipe is a keeper as the flavor was great!
Larger cookies are never a bad thing! I’m glad everyone enjoyed them. :)
Update because these cookies are the new favorite in my house. I stored the remaining cookies in an air right container and they were still soft the next day. My husband came home from work and straight to the cookie jar (even though he’s not much of a cookie person) and was sad that they were gone! I’ll be baking more today and doubling the recipe so that they last a good three days lol.

These cookies are heavenly!!! I was worried after letting them chill for a few hours because the dough felt a little dry, but I rolled the little dough balls until they softened, and all was well! They didn’t flatten out like many cookies I’ve made. They are gooey, puffy, and delicious! This is definitely going to be my go-to chocolate chip cookie recipe from now on. Just made these for my family. My almost 4 year old son wore an apron and kept ” taste testing” the dough. As i type he keeps running into the kitchen and stealing the baked cookies cooling on the rack!! Awesome cookies. I did rounded tbsps and got about 30 cookies…better when u have kids that arent content with having “just one” cookie !!

Although I always read comments, I never post any…BUT….these cookies….oh man…I just had to. These, by far, are the BEST chocolate chip cookies I have made to date!! Fridays are chocolate chip cookie day in our house and every week I try a new recipe. I have tried too many to count (feels like hundreds at this point with my Pinterest addiction), and am always on the hunt for the PERFECT cookie…but have yet to find it…until now. Rachel, I am thanking Jesus for making you right now as I am typing this with one hand and eating a giant, gooey, perfect;y thick cookie in the other, haha. Our family’s favorite chocolate chip cookie has always been the classic Nestle recipe on the bag. No matter what variation I try, we always go back. However, my one complaint is that they spread and are too thin for my liking (and yes, I have tried chilling them for 24 hours). These taste exactly like our favorite cookie but adds the huge, puffy, cloud-like texture that has been causing a void in my life for so many years. Thank you, thank you, Rachel for this recipe!! I can finally say my search for the perfect chocolate chip cookie has come to a happily ever after!

I agree with Jamie. I like to read comments on recipes, but usually do not write one of my own. But I had to this time.
I have baked numerous different chocolate chip cookie recipes over decades of baking, and these are without a doubt the best I have ever made. Even in an oven that is barely hanging on!
They were thick and soft and the flavors were perfect!
I tripled the batch, but made a little smaller cookies so I would have more (and to attempt some portion control!). The only other “adjustment” I made was I chilled them in the freezer and took them out when I turned on the oven.
When recipes call for “chilling” the dough, one thing I have found to be very helpful is to scoop out the cookie dough balls first and then chill. This makes it so much easier to scoop when the dough is soft. If the cookies need to be rolled to make perfect balls, and chilling helps make the dough less sticky, I still scoop them and then roll them when chilled. This also helps when I want to freeze some of the dough, and I can take out a few at time for those days when you absolutely must have hot, freshly baked cookies.
Bravo on this recipe! I will never bake with another recipe again.

Chilling overnight should be fine. You may need to let it rest a bit at room temp if it’s too firm after chilling so long.

Absolutely! Reduce the salt in the recipe to 1/4 tsp and it should be just fine. Enjoy! :)
Let me start by saying ive made about every recipe for ccc that i can find, melted butter, browned butter, bread flour, cake flour blah blah blah. I really do think you have the right ratio of sugar to flour to butter here. I do use straight from the fridge (never ever frozen) butter as my kitchen aid creams it just fine and it cuts the chill time as i keep my flour in the fridge as well. I use organic cane sugar and dark brown sugar and unbleached king arthur flour. Im gonna chop a little chocolate next time for variety. I will make this recipe my go to. Thank u so much. Finally made these into cookies a couples of days after my last post. I must say, I have a new favorite cookie dough recipe. I am saving this forever! Even my boyfriend (who HATES chocolate) stole them from me so he could eat them. Making more today for sure.

So, I’m curious as to the reason there is only 1/2C of butter. Does that make them fluffier? I’m only wondering because most recipes call for 1 C and my batter, though wonderful, was in little pieces(dry). I ended up using my hands and in the process of kneading the dough a bit it came together better. But this isn’t the typical consistency dough of any choc chip cookie I’ve ever made. Excited to try these but also curious. Thanks!
This is a smaller batch recipe, which is why you’re probably confused by the amount of butter. As far as your consistency goes, it sounds as though your measurements are off or the batter was not mixed properly. This batter shouldn’t be crumbly at all. I hope it turns out for you though! :)
Can I use salted butter??? I know this is a dumb question but what difference does it make?
You definitely can. You’ll need to reduce the salt called for in the recipe due to this. Typically reduce the salt by a 1/4 tsp for every 1/2 cup of butter.
Hi rachel, is it possible to use only granulated sugar? Brown sugar is hard to find where i live and i reallt want to give this recipe a try…. i don’t know it it will change the texture o flavor too much. Thank you

Is it ok to chill these in a round long way and cut them instead of using balls or will that make them too thin?
I did some of these cut into perfect flatter rounds and still great!
Then the rest in balls to see what would occur still great.
Either way works.
The cut flatter ones I only cooked 12 minutes the other the whole amount of time.
Ok They were fine when I rolled and cut them however so not sweet enough.
Then I did in balls after chilling 2 hours and they did not spread at all. I am an extremely experienced cook and baker so I find this very strange.
I am at 5,000 elevation and am wondering if there should not have been a change in quantity of ingredients or cooking time because of this.
I’m sorry but these absolutely did not work out at all.

You would absolutely need to make adjustments for baking at 5000 elevation. I’m at 350, so the difference would be fairly significant. There are many adjustments you would need to make to account for the difference in elevation. Do some poking around online and you’ll find lots of great info for adjusting ingredients, time and oven temperature. With the proper adjustments, I’m sure you’ll have much better luck! :)

Wow. These are amazing Rachel! I followed the recipe to a “T” and made each cookie a bit smaller, which yielded 18 cookies. :) Half the batch was chocolate chip and the other half was peanut butter chip. :P So yummy! Out of curiosity, any idea on calorie count for each?

Am I missing something? I chilled dough which I thought was odd and against my better judgement. Dough hard and cookies did not spread. Remained hard round balls.
It sounds as though your ingredient amounts may have been off, as they should definitely not stay hard and round in the hot oven.

I fluff up my flour and then do the scoop and sweep method.
Made these cookies today. Actually I started last night so they could chill, once chilled I continued and I must say these where delicious. I did add some white chocolate chips as well. Will keep for sure.
