Heat up your skillet. In a large bowl, beat eggs and mix in milk. Add dry ingredients, stir until combined well.
Peel and slice 2 apples. Using a food processor with a shredding disc or manual shredder, shred your apple slices. Remove shredded apples, toss onto a cutting board and chop up into smaller pieces. The pieces can be as small or large as you like. Add 1 1/2 cups of diced apples to your batter, mix well.
If adding walnuts to your recipe, chop them up and add to the batter now. I can't tell you how the pancakes will taste with walnuts since we didn't add them to ours. But it was a request so I had to add it in here.
Drop batter onto hot skillet and cook on each side until golden brown. Serve hot.
