Preheat oven to 400°F. Prepare a rimmed baking sheet with foil, for easy cleanup, and a wire rack.
In a large bowl, toss chicken wings with olive oil, salt and pepper. Arrange in a single layer on prepared pan with rack. Bake for 40-50 minutes or until cooked through and skin is crispy and golden.
In a medium bowl, combine buffalo sauce ingredients. Working with one or two wings at a time, toss to coat in prepared sauce. Transfer to desired serving dish and enjoy immediately with optional dipping sauces.
