Preheat oven to 350°F. Prepare a muffin pan with 12 liners.
In a small bowl, combine topping ingredients. Work together with a fork until combined and crumbly. Set aside.
In the bowl of a stand mixer, or large bowl, cream together butter and sugars. Mix in egg, vanilla and yogurt until nearly combined. Add remaining dry ingredients (minus apples), mixing until just smooth. Stir in apple chunks by hand.
Divide batter between prepared liners. Fill each liner roughly 3/4 full or one large heaping scoop per liner. Sprinkle with topping.
Bake for 20-25 minutes or until a toothpick inserted only has a few moist crumbs clinging.
Cool on a wire rack. Store in an airtight container.
