Vanilla Glazed Apple Cinnamon Muffins
Moist, fluffy muffins packed full with cinnamon apples and finished with a vanilla glaze!

Servings: 4 muffins
- 1/2 C all purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/4 C milk
- 2 Tbsp unsalted butter melted
- 2 Tbsp granulated sugar
- 1/4 C grated apple
- 1 large egg
- 1/4 tsp vanilla extract
- 1/4 C powdered sugar
- 1 tsp milk
Preheat oven to 350°F. Coat a standard muffin tin with nonstick spray; set aside.
In a medium bowl, combine flour, baking powder, cinnamon, nutmeg and salt.
In a large glass measuring cup or another bowl, whisk together milk, butter, sugar, apple, egg and vanilla.
Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
Scoop the batter evenly into the muffin tray. Place into oven and bake for 13-15 minutes, or until a tester inserted in the center comes out clean.
To make the glaze, combine confectioners’ sugar and milk. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.
When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin.
Allow glaze to set before serving.
Let cool on a wire rack.
