In a medium bowl, mix flour, cornstarch, salt, baking powder and baking soda. In a large measuring cup mix together buttermilk, milk, vegetable oil and egg yolk. In a small bowl, beat egg white until soft peaks form. Add vanilla and sprinkle with sugar. Beat until glossy and firm.
Pour buttermilk mixture into dry ingredients, whisk just until combined. Fold in egg whites.
Pour batter onto a lightly greased hot waffle iron, cooking to desired color and crispness.
Transfer cooked waffles to a baking sheet and place in warm oven until ready to serve.
Serve with fresh roasted strawberries and optional maple syrup or sweetened whipped cream.
Notes
*Due to waffle irons coming in a variety of sizes I cannot give an exact amount of batter to pour. 1 cup of batter will fit in the Calphalon Belgian waffle maker, using half of the batter and making 4 sections of waffles.An original recipe from Baked by Rachel
