  • 3/4 C all purpose flour
  • 1/4 C cornstarch
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 C buttermilk
  • 1/4 C milk
  • 6 Tbsp vegetable oil
  • 1 large egg separated
  • 1 Tbsp sugar
  • 1/2 tsp vanilla
  • Roasted strawberries for topping

  • Heat oven to 200°F and warm up waffle iron.
  • In a medium bowl, mix flour, cornstarch, salt, baking powder and baking soda. In a large measuring cup mix together buttermilk, milk, vegetable oil and egg yolk. In a small bowl, beat egg white until soft peaks form. Add vanilla and sprinkle with sugar. Beat until glossy and firm.
  • Pour buttermilk mixture into dry ingredients, whisk just until combined. Fold in egg whites.
  • Pour batter onto a lightly greased hot waffle iron, cooking to desired color and crispness.
  • Transfer cooked waffles to a baking sheet and place in warm oven until ready to serve.
  • Serve with fresh roasted strawberries and optional maple syrup or sweetened whipped cream.

*Due to waffle irons coming in a variety of sizes I cannot give an exact amount of batter to pour. 1 cup of batter will fit in the Calphalon Belgian waffle maker, using half of the batter and making 4 sections of waffles.
