In a stand mixer, add dry dough ingredients. Dissolve yeast and sugar in hot water, allow to sit for 5-10 minutes. With mixer turned on low, slowly pour yeast mixture into bowl. Continue mixing until smooth and dough pulls away from the sides of the bowl. Add additional flour as needed, a spoonful at a time only. Transfer to a lightly greased large bowl. Cover and allow to rise until doubled in size, roughly one hour.
Preheat oven to 425°F.
Melt butter in a medium skillet. Add chicken to skillet, sprinkling with 1/2 tsp cajun seasoning on each side. Continue cooking until the chicken is no longer pink in the center, roughly 4-5 minutes on each side depending on the thickness of your chicken. Remove and shred meat by hand or in a stand mixer with paddle attachment.
Prepare vegetables.
Lightly grease a baking sheet with olive oil. Stretch dough to fit pan. Lightly brush dough with olive oil, bake for 5 minutes.
After dough has partially baked, begin creating your pizza. Coat with sauce and half of the cheese. Arrange chicken and vegetables throughout. Sprinkle with 2 tsp cajun seasoning, or more if desired. Sprinkle with remaining cheese.
Bake for 12-15 minutes or until cheese is fully melted and bubbly. Slice and enjoy hot.
