Preheat oven to 375°F. Line a baking sheet with parchment paper.
Trim and cube chicken breasts into small bite sized pieces, roughly 1-inch.
In a small bowl, whisk eggs. In a second bowl, combine remaining dry ingredients. Coat a few chicken pieces at a time in the eggs. Coat one piece at a time in the bread crumb mixture. Transfer to prepared baking sheet. Lightly spray coated chicken pieces with olive oil.
Bake for 25-30 minutes or until cooked through. Serve with your favorite dipping sauces.
