In a large bowl combine: ground chicken, breadcrumbs, egg, salt, pepper, celery, onion and buffalo sauce. Mix by hand until ingredients are combined well.
Grab a portion of meatball mixture. Create a well to place a few crumbles of blue cheese. Shape into a 1 1/2" ball. Transfer to a parchment lined baking sheet or glass baking pan.
Bake at 350°F for 35-40 minutes.
Eat warm with optional dipping sauces and celery sticks.
To create a sub: Slice a sub roll length wise. Lay slices of cheese on the inside of your roll, overlapping. Toss meatballs in a small amount of buffalo sauce. Add coated meatballs to sub roll. Add sub to an oven safe container. Broil until cheese is melted. Slice and enjoy warm. *Dip in chunky blue cheese dressing for additional flavor.
