Prepare chicken by trimming fat and reducing thickness by pounding down or slicing in two, set aside. Heat a medium skillet over medium heat. When skillet is warm, add bacon. Cook several minutes per side. Remove just before it looks done as it will continue to cook after removed from heat. Drain on a paper towel.
Add chicken to skillet. Cook 4-5 minutes per side or until cooked through. Slice in half to check for any pink if necessary.
Slice roll or bread of choice in half. Slather each half with a good coating of spicy mustard. Layer with lettuce, chicken and bacon. Top off with remaining roll half. Enjoy!
