Add trimmed chicken, vegetables, seasonings and 5 cups of chicken broth to the bowl of a 5-6 quart slow cooker. Cook on high for 4 hours, or low for 8 hours.
When the initial cook time is up, remove and discard the bay leaf. Carefully remove and shred chicken, then return to slow cooker. Add alphabet pasta and cook for an additional 30 minutes. Add additional chicken broth as desired for a more brothy soup.
