Combine ingredients in a blender, process until smooth. If desired, strain liquid through a mesh strainer into a clean bowl. Discard solids.
Prepare 2 or 3 12x18-inch jelly roll pans with silicone baking mats (*see notes). Divide mixture between prepared pans. Use an offset spatula to create a very thin, smooth layer.
Bake for 4 hours, or until fruit leather is no longer sticky. Rotate pans between oven racks and turn 180°F every hour until done.
Transfer fruit leather to a cutting board. Slice into desired sizes. Wrap in parchment paper or wax paper to store.
Notes
Recipe yields roughly 2-3 pans.*If using 3 pans, add 1 cup mixture to each pan, spreading thin and baking for roughly 4 hours. If using 2 pans, add 1 1/2 cup mixture to each pan, spreading as thin and evenly as possible, baking for 4-6 hours plus.**Cook time will vary depending on the thickness of your mixture and oven temperature.An original recipe from Baked by Rachel
