Homemade waffles, bursting with blueberries and strawberries that are deep fried and coated in a sweet lemon glaze. A fun treat for breakfast, brunch or dessert!
In a medium bowl, prepare waffle mix as directed. Remove stems from strawberries and discard. Chop strawberries into ½-inch pieces. Add strawberries and blueberries to waffle batter, stirring gently with a rubber spatula.
Lightly spray waffle iron with baking spray. Evenly spread batter to just cover waffle iron. Do not overfill. Cook until golden brown. Remove to a wire rack to cool. Repeat with remaining batter.
Using a sharp knife or cookie cutter, carefully remove the center of each waffle.
Heat vegetable oil in a deep fryer. Alternately, add 3-4 inches of vegetable oil to a large stockpot. Heat oil to 350°F.
Fry one waffle at a time, cooking for 1 minute on each side or until deep golden. Drain on paper towels.
In a medium bowl, beat together powdered sugar, lemon extract and water. Mix until smooth, adding additional water as needed for thin icing consistency.
Dip cooled waffles in icing. Drain on a wire rack over a large baking sheet.
Enjoy immediately.
