These easy oatmeal caramel apple bars feature an oatmeal cookie base, a tender caramel apple filling and a crunchy cookie crumb topping, creating an ultimate apple pie style dessert bar.
Heat oven to 350°F. Prepare a 9x13 pan by lining it with aluminum foil. Make sure there is enough around the edges so that you can pull up on it to remove bars when done cooking.
Pour oatmeal cookie mix into a large bowl. Cut cold butter into small pieces then mix in using two forks or pastry cutter. Add in egg and blend completely.
Take out 1 1/2 cups of the cookie mixture and set aside. Pour remaining mixture into prepared pan and press it flat with your hand.
Bake 15 minutes.
Take finely chopped apples and carefully spread over baked cookie crust. Pour caramel into a small bowl and then add in flour. Stir until combined. Drizzle over the apples and then cover with remaining cookie mixture.
Bake for 15-20 minutes or until golden brown. Cool to room temperature or place in fridge until ready to serve.
