Place trimmed chicken breast, chicken broth and seasonings in the bowl of a small slow cooker. Cook on low for 4 hours. Shred chicken at the two hour mark, return to slow cooker.
Coat the bottom of a medium skillet with vegetable oil. Heat over medium heat until hot. Place half of one wonton wrapper over the end of a nylon spatula, pressing the lower half into the oil to fry for 15-30 seconds. Grab cooked portion with tongs, flipping and cooking the other half of the wonton wrapper for 15-30 seconds or until crisp. Drain on paper towels. Repeat with remaining wrappers.
Fill fried wontons with spicy shredded chicken and additional optional fillings. Enjoy warm.
