In a deep fryer or large skillet heat oil to 350F°. How much you need will depend on the size and depth of the pan you are using.
Slice your peeled and cored apple into thin 1/8 inch strips.
Add pumpkin pie spice (or apple pie spice) to your prepared pancake batter.
Dip apple rings in batter before frying for 1 - 2 minutes until golden brown. Carefully flip about halfway through.
Remove with tongs or a fork and place on a paper towel lined plate.
When finished frying and slightly cooled, dust with powdered sugar if desired.
