Preheat the oven to 350F°. Grease an 8 1/2 x 4 1/2 loaf pan.
To make the bread batter, using a wooden spoon mix the egg, vegetable oil, apple juice, and brown sugar in a large bowl. Add in the apples.
In a separate bowl sift the flour, baking powder, baking soda, salt and apple pie spice. Mix the dry ingredients into the wet ingredients and stir until combined. (Mixture will be thick). Set aside.
For the swirl, whisk all the ingredients in a small bowl, set aside.
For the crumble. Mix the flour, sugar and apple pie spice in a small bowl. Cut in the cold butter until the mixture resembles course crumbs.
To make the loaf, pour half the bread batter into the pan then pour in the cream cheese mixture. Pour the remaining bread batter over the cream cheese then pour all of the crumble mixture on top. Lightly press the crumbs into the batter.
Bake for 65-75 minutes, until a toothpick inserted comes out clean.
Cool for 15 minutes in the pan, then finish cooling on a wire rack.
