  • 1/4 C unsalted butter softened
  • 1/4 C granulated sugar
  • 6 Tbsp light brown sugar
  • 2 Tbsp powdered sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/4 C sweetened shredded coconut

  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp coarse sea salt

  • Preheat oven to 375°F. Line a baking sheet with parchment or a silicone baking mat.
  • Using a medium cookie scoop, scoop and place dough 2-inches apart on the prepared baking sheet. Lightly sprinkle with flaked sea salt. Bake for 11-12 minutes or until deep golden. Immediately transfer to a wire rack to cool completely.
