In the bowl of a stand mixer, cream together butter and sugars. Mix in egg and vanilla, followed by coconut, coarse sea salt, baking powder and baking soda. Scrape bowl as needed. Slowly add flour, mixing until smooth and all ingredients are fully incorporated. Stir in chopped semi-sweet chocolate by hand. Chill for at least 2-3 hours.
Preheat oven to 375°F. Line a baking sheet with parchment or a silicone baking mat.
Using a medium cookie scoop, scoop and place dough 2-inches apart on the prepared baking sheet. Lightly sprinkle with flaked sea salt. Bake for 11-12 minutes or until deep golden. Immediately transfer to a wire rack to cool completely.
Store cookies in an airtight container.
