Chewy cookies with shredded coconut and chocolate chunks throughout, sprinkled with flaked sea salt for the perfect finishing touch.
6Tbsplight brown sugar
1 1/2tspvanilla extract
1/4Csweetened shredded coconut
3/4Call purpose flour
1/4tspcoarse sea salt
4ozsemi-sweet chocolate baking barroughly chopped

In the bowl of a stand mixer, cream together butter and sugars. Mix in egg and vanilla, followed by coconut, coarse sea salt, baking powder and baking soda. Scrape bowl as needed. Slowly add flour, mixing until smooth and all ingredients are fully incorporated. Stir in chopped semi-sweet chocolate by hand. Chill for at least 2-3 hours.
Using a medium cookie scoop, scoop and place dough 2-inches apart on the prepared baking sheet. Lightly sprinkle with flaked sea salt. Bake for 11-12 minutes or until deep golden. Immediately transfer to a wire rack to cool completely.
Store cookies in an airtight container.
