Classic slow cooker chicken and vegetable soup with tender cheese tortellini. A comforting and filling meal, easy enough for any night of the week!
1 1/2lbboneless chicken breast
1/2tspground white pepper
6ozdried small cheese tortelliniroughly 1 1/2C
To the bowl of a 5-6 quart slow cooker add chicken, vegetables, spices, chicken broth and bay leaves. Cook on high for 4 hours or on low for 8 hours. Discard bay leaves. Remove chicken and shred with forks. Return chicken to slow cooker.
Add 6 ounces (or 1 1/2 cups worth) of small dried cheese tortellini. Cover and cook for an additional 20-30 minutes or until tortellini is cooked to your liking. If necessary, additional chicken broth may be added.
