Happy new year! I hope everyone had a wonderful holiday season and is staying plenty warm! We’ve been in a ridiculous cold spell in the northeast, with what appears to be a crazy storm brewing off of the coast. Winter came in fast and hard this year! I’d be so content to curl up next to a warm cozy fire with a good book and stay there till spring. Better yet… maybe an extended vacation in the Caribbean!

I feel like the holiday season flew by way faster this year than it ever has before. Normally by the end I’m itching for it to be over and everything put away. We still haven’t put anything away and I somehow didn’t get around to watching all of the classics! There are at least three movies that I didn’t get around to watching at all this season, ones that I always watch at least once every holiday season. So odd!! Maybe with the snowy weather coming our way, I’ll cave and watch them late. Better late than never, right? Does that even apply to holiday movies?

One of my favorite things about January is the food. SO much soup and comfort food!

This soup is so ridiculously comforting and surprisingly filling! It’s so easy, it’s perfect for any night of the week! Seriously, just toss and go. The only thing you’ll do later is add the pasta. Easy peasy!

It’s also guaranteed to be loved by even the pickiest of eaters… so long as they enjoy soup and pasta! But who doesn’t love those?!

Slow Cooker Chicken Tortellini Soup

Classic slow cooker chicken and vegetable soup with tender cheese tortellini. A comforting and filling meal, easy enough for any night of the week!

Servings: 8 plus

Ingredients

  • 1 1/2 lb boneless chicken breast
  • 1 C yellow onion chopped
  • 1 C celery chopped
  • 1 C carrots sliced
  • 3 cloves garlic minced
  • 1/2 tsp ground white pepper
  • 2 tsp salt
  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • 6 C chicken broth
  • 2 bay leaves
  • 6 oz dried small cheese tortellini roughly 1 1/2C

Instructions

  • To the bowl of a 5-6 quart slow cooker add chicken, vegetables, spices, chicken broth and bay leaves. Cook on high for 4 hours or on low for 8 hours. Discard bay leaves. Remove chicken and shred with forks. Return chicken to slow cooker. 
  • Add 6 ounces (or 1 1/2 cups worth) of small dried cheese tortellini. Cover and cook for an additional 20-30 minutes or until tortellini is cooked to your liking. If necessary, additional chicken broth may be added. 
  • Serve warm.

    What is the serving size? I’m trying to figure out how many freestyle smartpoints it would be on weight watchers!!

      Serving sizes can vary quite a bit from one household to another, so I don’t offer an exact number. I hope you enjoy it! :)

    Will frozen tortellini be such as good ??

      Your best bet would be to add tortellini to your soup prior to enjoying it if you were to plan on freezing.

    Can you use frozen tortellini and what can you use if you don’t have enough broth

      I would not recommend using frozen, as you should never add anything frozen to a slow cooker. As far as broth goes, you can typically use 1 cup boiling water with 1 chicken bouillon cube in place of 1 cup broth. I have not personally tried this, but in a pinch, it should work fine. I would recommend dissolving the cube in the boiling water before cooling slightly and adding to your soup.
