We did some adult-ing this weekend. We spent Saturday morning picking out a new mattress. I know, super exciting, right? Honestly, it was pretty fun. And…most kids probably wouldn’t think picking out a new bed would be fun… unless you have the entire mattress store to yourself and get to try them all out, including the remotes for all of the adjustable features. Which, we did. It just happened that way. We definitely got lucky. Normally furniture shopping with three in tow would be stressful, but this was the total opposite. Bonus, we got our long overdue new mattress the next day! I couldn’t be happier.

After having a Sleep Number for 10 years, we were ready for a big change. No more remotes. No more air. We went the the Tempurpedic route. Of course, I haven’t slept on it yet (or I will have by morning), so…fingers crossed it was an incredible nights sleep.

Also, from this experience, I learned that kids of all ages only need boxes to be happy. Seriously. If you follow me on Snapchat (bakedby.rachel), you may have noticed my two youngest pretending to sleep in pillow boxes. Seriously. It was like Christmas to them. The best day ever. All because of two brand new boxes to play in that also just so happened to have giant windows. A million uses. Beds, travel beds, tv’s, police cars. It was watching and listening to all of their new ideas. So imaginative.

I’ve mentioned it before, but I’ve somehow been turned into a whiskey drinker. Not straight. I could never, but mixed with the right combination of flavors and it’s out of this world – perfection. Like this drink.

I’ve also become obsessed with pineapple – everything. So, I can pretty much guarantee you’ll be seeing plenty more pineapple packed recipes in the coming months.

I combined those two things into my new favorite cocktail.

A simple three ingredient, refreshing pineapple whiskey sour. Light. Flavorful. An absolute must make.

Pineapple Whiskey Sour

This simple three ingredient pineapple whiskey sour is a refreshing drink, perfect for any cocktail night.

Ingredients

  • 4 oz pineapple juice
  • 1/2 oz lemon juice
  • 1 oz whiskey

Instructions

  • Add ice to a cocktail shaker. Pour ingredients into shaker. Shake until thoroughly chilled. Pour over ice. Serve with an optional lemon slice.

    That does look wonderful! I love pineapple too. I think this needs to go on our bar menu for summer entertaining!

      Go first thing in the morning to a mattress specific store. Best way to avoid the crowds and have the store to yourself. ;)

      I, too, like whiskey. I drink it mostly straight, but was looking for something “special” using things in the pantry.
      I added lime juice instead of lemon, because that’s what I had in the fridge. I added a grilled pineapple spear for garnish, because I’m fancy. It was perfect!

    I just made this and immediately subscribed to your blog. I had gotten bourbon to try another recipe with and it was just not to my liking- and I thought it was the bourbon. However, I decided to give it another chance instead of toss it, and after making your recipe, which was super quick and simple, I’m really enjoying it! I also love that it’s all juice and no added sugar. Thanks for sharing.

      You can use any whiskey. I flip flop between Whistle Pig whiskey and Bulleit whiskey.

      When it comes to cocktails, your best bet is to make it as close to serving time as you can. You can prep the other ingredients together ahead and chill both those and the whiskey though. Add the whiskey just before serving.
