Preheat oven to 350°F. Line a baking sheet with parchment or a silicone baking mat.
In a large bowl, cream butter and sugars. Mix in egg and vanilla. Add remaining dry ingredients, minus chocolate, mixing until smooth. Stir in chocolate by hand.
Arrange medium scoops 2 inches apart. Bake for 14 minutes or until lightly golden around the edge. Rest on pan for 1-2 minutes, transfer to a wire rack to cool completely. Store in an airtight container.
